Warm up with Coles' delicious Chicken Noodle Soup recipe. Packed with wholesome ingredients and bursting with flavour, it's the perfect comfort food for the chilly Winter months. All ingredients are available to be purchased from Coles, Dickson Village.

Ingredients:

1 tbs olive oil
1 brown onion, coarsely chopped
2 carrots, peeled, coarsely chopped
2 celery sticks, trimmed, coarsely chopped
2 garlic cloves, crushed
2 thyme sprigs
12 cups (3L) salt-reduced chicken stock
1/2 x 375g pkt dried pappardelle
3 cups shredded roast chicken

Method:

Step 1
Heat the oil in a large saucepan over low heat. Add the onion, carrot, celery, garlic and thyme and cook, stirring, for 10 mins or until the vegetables are just tender.
Step 2
Add the stock. Increase heat to high and bring to the boil. Add pasta and cook, stirring occasionally, for 6 mins. Add the chicken and cook for a further 2 mins or until the chicken is heated through and the pasta is al dente. Remove thyme and discard.
Step 3

Divide the soup among serving bowls. Season with pepper to serve.

For a light and healthy dinner that doesn't skimp on flavour, try this tender flaky fish infused with fragrant coconut. Just add rice and greens. All ingredients are available from Coles, Dickson Village.

Ingredients:

400ml can Coles Coconut Cream
1 1/2 tbs sweet chilli sauce
1 tbs Coles Lime Juice
1 tbs fish sauce
1 long red chilli, thinly sliced (optional)
800g Coles Deli Thawed Basa Fillets
1 1/2 cups (300g) jasmine rice
100g Coles Frozen Baby Beans, halved, steamed
1 bunch choy sum, chopped, steamed

Method:

Step 1
Combine the coconut cream, sweet chilli sauce, lime juice, fish sauce, half the chilli, if using, and 1/2 cup (125ml) water in a large non-stick frying pan over medium-high heat. Bring to the boil. Reduce heat to medium and simmer, covered, for 2 mins or until coconut mixture thickens slightly.

Step 2
Arrange fish in a single layer over the coconut mixture and simmer, covered, for 8-10 mins or until cooked through.

Step 3
Meanwhile, cook the rice following packet directions.

Step 4
Divide rice among serving bowls. Top with fish and spoon over coconut mixture. Sprinkle with remaining chilli, if using. Serve with beans and choy sum.

Serve and enjoy!

Treat yourself this Easter and indulge in the irresistible fusion of traditional hot cross buns and rich brownies, creating a delectable treat that will leave you craving more🗿 🐰 🍫

Ingredients:

180g dark chocolate, chopped
200g butter, chopped
1 cup (220g) caster sugar
1/4 cup (55g) brown sugar
3 free-range eggs
1 1/3 cups (200g) plain flour
1/4 cup (35g) self-raising flour
1/4 cup (25g) cocoa powder
1/2 cup (95g) white choc chips
150g Coles Traditional Hot Cross Buns, torn
1/2 cup (75g) white choc melts, melted

Method:

Step 1
Preheat oven to 190°C. Grease a 20cm x 30cm lamington pan and line base and sides with baking paper, allowing the sides to overhang.

Step 2
Combine the dark chocolate and butter in a saucepan over medium heat. Cook, stirring occasionally, for 5 mins or until the chocolate melts and the mixture is smooth. Remove from heat and stir in combined sugar. Set aside for 10 mins to cool. Stir in the eggs, combined sifted flour and the cocoa. Fold in the white choc chips.

Step 3
Spread a little of the chocolate mixture over the base of the prepared pan. Top with bun pieces. Evenly spoon over remaining chocolate mixture and smooth the surface, lightly pressing down to flatten bun pieces slightly. Bake for 30-35 mins or until just firm to touch. Cool completely in the pan.

Step 4
Cut brownie into squares. Spoon melted white chocolate into a sealable bag and snip off 1 corner. Pipe onto the squares to make crosses. Set aside for 30 mins or until firm.

RECIPE TIP: These brownies can be made ahead – store them in a single layer in an airtight container at room temperature for up to 3 days, or in the fridge for up to 1 week. You can wrap up the brownies to give as gifts, too.
