Looking for dinner inspo? Stuff a chicken or two (I like to do an extra one so I have leftover roast meat for lunches and quick meals for the next couple of days) with lemon and herbs - or today I used fennel fronds - drizzle with extra virgin olive oil and sprinkle with salt and pepper. Stick it all in the oven. In an hour I’ll add a tray of veggies including the fennel bulbs, pumpkin, potatoes & Brussels sprouts. And dinner cooks while I’m still at my desk.

NO WASTE / I had a few requests on how to make the ‘frittata loaf’ I made yesterday. I basically cleared out the fridge of leftovers (roast sweet potato, baby spinach, cherry tomato, corn, carrot)… I popped these into a big bowl, cracked in four eggs and stirred/combined. Meanwhile I lined a loaf tin with baking paper. Popped the mixture in the loaf tin, sprinkled a little cheese on top, and baked for 30-40min at 180C. Great picnic food. Lisa Xx
