An Introduction of QQQ Akane, written by Fracture 

QQQ Akane is a person who is straight forward about what she likes, what she wants to do and values her own sensibilities who has many specialised ideas.

She has a clear opinion, and we always have passionate, creative conversations when we catch up…when drinking she often drinks tequila. 

QQQ Akane also cooks delicious food, all of her food is delicious no matter which one you eat! Many of her recipes are full of ideas and I think that her food is at a level that puts professional chefs to shame and you won’t find food like her’s in restaurants because it is home style soul food.

お酒を飲むときは、テキーラが多い
おいしいご飯を作っているあかねさんのご飯はどれを食べても全ておいしい!そしてご飯もアイディアがいっぱい詰まったレシピが多く、他の店では味わえないプロの料理人顔負けのレベルだと思っている。

An introduction of Fracture, written by QQQ Akane

I met Fracture in 2023 shortly before he left for Europe for three months with his reckless savings. 
He was running around in between working, skating and parties. And before he left to Europe, he brought me a photo book titled “URBAN LAND SCAPE OF TOKYO which he made himself.

The photo book contains scenery of Tokyo, where I was born and raised for 23 years, and now 14 years after leaving Tokyo, I once again looked at the glamor and abnormality in that scenery, and at the same time I strongly felt his “perspective” and the moment Fracture captured it through his lens. 

“It’s the most fun when I see the drama that happens in the street,” he said…talking about his dreams and thoughts with momentum. I think it’s not easy to understand his flash but when you see his photos, which are captured with a boyish heart…explanations may be meaningless. I believe that a person’s heart’s “perspective” resides in the lens of a camera, and I am honored to be able to exhibit with him, who has a real “perspective”.

Fractureとは2023年、彼が無謀とも言える少ない貯金を握りしめて3ヶ月ヨーロッパへ旅立つ少し前に出会いました。
スケートとパーティを駆け巡る彼は旅立つ前、自分で作った写真集を私の元へ持ってきてくれました。

その写真集には私が23年間生まれ育った東京の風景が写っていて、東京から離れて14年の今、改めてその風景の中にある華やかさや異常さを見つめ、同時にFractureが己のレンズを通し切り取った瞬間に彼のリアルな「視点」を強く感じました。

「ストリートで起こるドラマをみてる時が一番楽しいんですよ。」という彼は勢いに任せて自身の夢や思いを語るので、母国語でも彼の閃光を理解するのは簡単ではないと思うけど、少年のような心で切り取られた彼の写真を見れば説明なんて無意味なのかもしれない。

カメラのレンズにはその人の心「視点」が宿ると私は思っていて、今回リアルな「視点」を持つ彼と二人で展示をさせてもらえる事をとても光栄に思います。

A large quantity of rice becomes delicious plump by cooking it with heat at a stretch.
At QQQ ST. KITCHEN, we cook rice using a gas flame flame, not electricity.
I like cook with material that i grew up with in nature, by power of nature.
It is one of the reasons why we can serve to customers with confidence & consistent taste.

Our rice ball is made by hand, one by one without any machine.
Experience is necessary to make quantities of rice and ingredients, seasoning each onigiri carefully.
It is one of the reasons why an Onigiri of QQQ is loved every day and why our staff continue to make it.

私たちのおにぎりは、機械を使わず一つ一つ手で握られています。
お米の量、具の量、塩加減など一つ一つ丁寧に作れるようになるには経験が必要です。
毎日、継続して作ってくれているスタッフがいることも、QQQのおにぎりが愛されている理由の一つです。

Bacteria can occur if you keep rice warm in an electric rice cooker… although as we cook rice with a gas flame then stored in a ‘ Ohitsu’ a natural wooden sourced rice box which keeps humidity suitable for storing rice perfectly making it deliciously plump. Ohitsu is a wooden rice chest’s hand made by craftsmen & woman in Japan, joining timber without any glue making in the best natural way to store rice.

When a cook makes use of natural material using the traditional technique ‘ohitsu’ for storing Japanese rice, the depth of texture & flavour increases for how we taste rice and we eat it deliciously.

Q. What is the difference between sushi and onigiri?
A. The main difference between those two is the Rice.
Sushi uses sweet vinegar rice because the toppings are mostly raw seafood so vinegar helps food safety, then sushi uses soy sauce to make up the flavour’s saltiness.
Onigiri uses plain rice and toppings are mostly pre salted/cooked ingredients.

So basically sushi is the best way to enjoy fresh seafood with Japanese rice and onigiri is the best way to taste plain rice quality with many flavours inside.

Rice is the most important base of Japanese soul food. Onigiri’s are made using plain rice mixed with salt whereas sushi usually mixes the rice with a sweet sushi vinegar. So, the quality of Onigiri is focused more toward a natural rice flavour.

Japanese people make sake from rice just like wine is made from grapes.
