Savoury mince
Time to complete: 40 minutes
Cost: Around $25
Ingredients:
500 grams of mince
- 1 onion
- 1 carrot
- 3 potato’s
- 2cup of frozen vegetables
- 250ml of gravy
- 1 tablespoon of soy sauce
- 1 tomato diced
Method:
1. Dice and boil potatos.
2. Heat oil in a large saucepan, then add onion and carrot for 5 minutes, or until softened.
3. Add beef mince / ground beef and cook, breaking up with a spatula or wooden spoon, for 8-10 minutes until browned.
4. Add tomato, soy sauce, gravy, and potatos. Season to taste
5. Reduce heat and simmer for 10 minutes or until vegetables are tender.
Milo & Sugar
Time to complete: Less than 2 minutes
Cost: $7
Ingredients:
- Milo (amount is up to you)
- Sugar (amount is up to you)
Method:
1. Using either a tea or table spoon, scoop Milo into a bowl
2. Using either a tea or table spoon, scoop sugar into a bowl
Chicken Parmigiana
Time to complete: 10 minutes
Cost: $10
Ingredients:
- 1x Woolworths/Coles deli schnitzel
- 3 teaspoons of Leggos Simmer
- Sauce Chicken Parmigiana ( jar)
- One hand full of grated cheese (preferebley mozzarella)
- One Handful of frozen chips Oil
Method:
1. Preheat oven to 180 degrees and turn on pan to medium heat and add oil
2. Cover baking tray with paper, add frozen chips
3. Put schnitzel on fryin pan and cook each side for 4-6 minutes
4. Remove from pan, place on baking tray (pull out of oven (with chips)
5. Add Leggo’s Parmigiana sauce and cheese on top
6. Place back in oven for 5-10 mins (once cheese is melted and golden on top)
7. Serve chips and parmigiana onto plate (can serve with garden salad/ Cesar salad)
Butter Chicken
Time to complete: 1 hour 25 minutes
Cost: $40
Ingredients:
2 lbs. boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup tomato paste
- 1/4 cup plain Greek yogurt (I use non-fat)
- 1 tablespoon lemon juice
- 2 teaspoons cumin
- 2 teaspoons garam masala (see notes)
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 3/4 teaspoons black pepper
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1 tablespoon canola oil
- 1 small onion, diced
- 5 cloves garlic, minced
- 2 tablespoons light brown sugar
- 1/2 cup plain Greek yogurt (I use non-fat)
- 1/2 cup water
Method:
1. Place the cut pieces of chicken in a bowl or tiptop plastic bag. Combine all of the marinate ingredients in a bowl and stir well. (It will be very thick.) Pour the marinate ingredients over the chicken and stir to coat all of the chicken. Let marinate for at least 30 minutes and up to 8 hours (see notes).
2. Heat a large skillet over medium-high heat. Add canola oil.
3. Add onion and cook for 2-3 minutes, until softened. Add garlic and cook for an additional minute.
4. Add the marinated chicken (along with all of the marinade) to the pan. Sprinkle with brown sugar and cook for 2-3 minutes.
5. Add the yogurt and water, reduce the heat to medium or medium-low, enough to maintain a steady simmer. Let cook for 8-10 minutes, until the chicken is cooked through and sauce is thickened.
6. Season to taste with salt and pepper (it may not need any).
7. Serve the chicken hot with extra sauce spooned over top.
Honey Joys
Time to complete: 20-25 minutes
Cost: $12
Ingredients:
- 90g butter or margarine
- 1/3 cup sugar
- 1 tablespoon honey
- 4 cups corn flakes
Method:
1. Preheat oven to 150°C.
2. Line 24 hole patty pan with paper cases.
3. Melt butter, sugar and honey together in a saucepan until frothy.
4. Add Kellogg's® Corn Flakes and mix well.
5. Working quickly spoon into paper patty cases.
6. Bake in a slow oven 150°C for 10 minutes.
7. Cool.
Honey Soy Chicken w Veggies
Time to complete: 30 minutes
Cost: $15
Ingredients:
- 500g Chicken Fillets (Diced)
- 1.5 tablespoons of Soy Sauce
- 1 tablespoon of Honey Choice of Vegetable to oven bake (Carrot, Sweet Potato or Potato)
- Broccoli
Method:
1. Cut and cube the chicken. Dice all the vegetables to have them ready.
2. Grease pan, add chicken, salt, pepper, and garlic while cooking.
3. Once cooked, drain if there’s excessive liquid. Then add the honey and soy sauce to the chicken and let cook for a while so the chicken can absorb.
4. Remove chicken from the pan and add all the vegetables to the sauce. Mix and cover until they have softened as much as you like. Add the veggies and sauce on top of the chicken and mix.
Banana Pancakes
Time to complete: 10 minutes
Cost: $5
Ingredients
- 1 banana
- 1 egg
- 1 tbls spn of honey
- 1 tea spoon Cooking oil
Method:
1. Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
2. Stir flour mixture into banana mixture; batter will be slightly lumpy.
3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
Cream of Chicken Rice
Time to complete: 20-25 minutes
Cost: Under $16
Ingredients:
- 2 cups rice
- whole roast chicken
- Campbell's Cream of Chicken Soup
- milk (half of soup can)
- water (half of soup can)
Method:
1. Boil rice.
2. Tear up chicken and heat up.
3. Add can of Campbell’s Cream of Chicken to saucepan with a half can of milk and a half can of water.
4. Continually stir until sauce combines and thickens without letting it boil.
5. Combine chicken and rice with sauce.
6. Add salt and pepper to taste, garnish with parsley and serve.
