Cotton Candy Cake

Cotton Candy Cake: A whimsical confection featuring fluffy layers of cake infused with the sweet nostalgia of cotton candy, pure delight in every slice.

Ingredients:
Whole egg (1, extra large), room temperature
Egg whites (3, extra large), room temperature
Buttermilk (1 cup, 240 g), room temperature
Granulated sugar (1 3/4 cups, 350 g)
Lorann Cotton Candy Flavoring (1 tablespoon, 13 g)
Cake flour (3 cups + 2 tablespoons, 366.6 g)
Baking powder (1 tablespoon + 1 teaspoon, 16 g)
Salt (3/4 teaspoon, 4.2 g)
Unsalted butter (1 cup, 226 g), room temperature
Pink and blue food gel for coloring (optional)
Directions:
Preheat your oven and prepare your cake pans with non-stick spray and parchment paper.
Mix the whole egg, egg whites, and flavoring in a bowl.
In a stand mixer, combine flour, sugar, baking powder, and salt. Then add butter and buttermilk, mixing until light and fluffy.
Gently incorporate the egg mixture, divide the batter, and tint with food gel.
Bake until a toothpick comes out clean, then let cool on wire racks.
Frosting:
Unsalted butter (2 cups, 452 g), slightly chilled
Powdered sugar (6 cups, 750 g), sifted
Heavy cream (3 tablespoons, 43.3 g)
Lorann Cotton Candy Flavoring (2 teaspoons, 8 g)
Pinch of salt
Food gels for coloring
Optional: Cosmic Rush Twinkle Sprinkle Medley
Mix butter until fluffy, gradually add powdered sugar, cream, flavoring, and salt. Beat until desired consistency, then tint with food gels.
Prep Time: 15 minutes | Baking Time: 20-23 minutes per layer | Total Time: Varies with decoration | Servings: 1 4-layer 6-inch cake or 1 3-layer 8-inch cake

Celebrate the Australia Day long weekend at our community event and fireworks on Saturday 27 January. 🎆 Come down to the iconic Rockingham Foreshore from 5pm - 8.45pm and celebrate our nation at this special event for the whole community. Make sure you take note of the new date so you don’t miss out on all the fun: Saturday 27 January. (There won’t be any event at the foreshore on Friday 26 January.)

There will be lots for everyone to enjoy, including fireworks at 8.30pm, a show-stopping performance by Bluey and Bingo, and live music from Little Belle and 2023 Breakthrough Music Competition contenders. There will also be carnival rides, roaming entertainment, face painting, children’s activities, a sensory-friendly chill-out zone and a variety of food vendors. Please note that fees apply for the showbag stand and some carnival games.
