A very special thank you to our first Industry Maverick, , from
Industry Mavericks is an initiative developed by our restaurant manager, , to share knowledge, passion, and experience with our team and our wider industry community.
Ash was an incredible first. She is a fifth-generation butcher and is completely passionate about the quality, ethics, and sustainability of the meat she sells at her butcher shop in Prahran Markets, as well as the customer service. She went through their shop’s history and products and then expertly showed us how to break down a side of lamb. She also surprised us all by telling us they use eye fillet for the steak sandwiches they serve at the shop - that is why they are so good!
Thanks, Ash. You are an absolute legend, and we loved learning from you and hearing your story!

us to share the story of our chairs, their legacy in design history and her work
advocating for Australian design.
