HOW LONG IS LONG ENOUGH??
Marinating is an essential step to infuse the meat with flavour and tenderize the meat.
Generally, it's recommended to marinate pork ribs for at least 4 to 12 hours. This allows enough time for the seasoning to pe*****te the meat, ensuring a delicious and savoury outcome.
For more pronounced flavours, marinating the ribs overnight, approximately 8 to 24 hours, is often preferred. This extended marinating period allows the spices and herbs to deeply permeate the meat, resulting in a richer and more robust taste.

Wash and cut your potatoes to 1/4 inch thick evenly for cooking.
HOT TIP!! Soak the Potatoes: Place your cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This step removes excess starch, which helps the fries become crispy when cooked.
Preheat the oven while the potatoes are soaking, preheat your oven to (230°C). If you prefer frying, heat oil in a deep fryer or a large, heavy-bottomed pot to (175°C).
Drain and pat the potatoes dry with a clean kitchen towel. Transfer them to a large bowl and drizzle with olive oil. Toss the potatoes to ensure they are well-coated. Sprinkle the TAIPAN BBQ peri peri seasoning and mix well to coat evenly.
For roasting, spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until the fries are golden and crispy.
For frying, carefully place small batches of the fries into the hot oil and cook for about 3-5 minutes or until they are golden and crispy. Remove with a slotted spoon and drain on paper towels.

Elevated Chicken Recipe - Its a bit special!
INGREDIENTS
3 Chicken Breast fillets
6 dollops of Greek yoghurt (2 per piece)
Generous coating of Mediterranean Magic Chicken and Fish Rub/Seasoning
Fresh Lemon squeezed (1/2 to 3/4)
Olive Oil
DIRECTIONS
Lightly coat your fillets with olive oil
Generously coat both sides with Magic seasoning
Dollop on top the yoghurt
Put the fillets with coatings into a large freezer bag and squish it around to completely coat the chicken with yoghurt and seasoning
Add your lemon juice (makes all the difference)
Leave to marinate for an hour or overnight.
Fry your fillets in a pan to sear and add a little colour
Pop into an baking tray and cook on 180 for 20 mins. (internal temp 75c)
Serve with whatever your favourite side is. (goes well with any veggie, rice or chips)

Avocados aren't just for guacamole! Halve them, remove the pit, and brush them with a little olive oil. Grill them cut-side down until they have nice char marks. You can fill them with salsa, pesto, cheese, or even a fresh crab salad. Grilling brings out their natural creaminess. Try brushing firstly with Loco Lime Glaze and serve with fish 🐟
