Waldorf-Astoria Red Velvet Cake
Handwritten recipe for a Waldorf Red Cake
1/2 cup shortening
1/2 cup of sugar
1 teaspoon vanilla
2-ounce bottle red food color
2 teaspoon cocoa
2 1/4 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon soda
1 teaspoon vinegar
Cream shortening and sugar, add eggs, and beat until fluffy; add vanilla. Make a paste of red color and cocoa, add to mixture. Add buttermilk alternating with salt and flour. Add vinegar to soda, but hold over a bowl as it foams. Blend into the batter. Do not beat hard. Bake 20 minutes at 350-degrees in 2 9-inch layer pans. Cool and cut each layer in two.
Frosting
3 tablespoon flour
1 cup milk
1 cup of sugar
1 teaspoon vanilla
1 cup butter
Cook flour and milk until thick, cool. Cream sugar and butter and vanilla until fluffy. Add flour and milk mixture. Do not beat too long. Spread between layers and on top.

Over many years, a lot of hard yakka has gone into trialing and perfecting every recipe, to achieve (in my opinion), the perfect balance of taste and consistency that I would expect if I were to go out and buy delicious goodies. This was my mission! I wanted to make delicious food that actually tasted as good as it looked! And I could only do this by using the very best quality ingredients.
I use flour and sugar grown on Aussie farms.
I only use eggs that are farm-fresh and free-range.
I use real butter, cream, and full-cream milk produced only from Australian dairies.
I use Queen vanilla extracts and pastes, which are organic and Australian-owned.
I use Cadbury Old Gold chocolate in my frostings, ganaches, and sauces.
I use nuts grown only in Australia
I use fresh sun-ripened oranges, lemons, limes and mandarins grown organically right from my own backyard!
Other fruits used are still Australian-grown and only used when in season.
The packaging company I use is Australian-owned, and all packaging is Australian-made, unbleached, and environmentally-friendly.
Where I cannot find a suitable Australian product, I ensure that a superior foreign alternative is used.
I use cocoa that is manufactured in Germany, which, I believe, is the best quality I have sourced so far.
I use frozen and dried cranberries from USA.
Some chocolate and decorative confectioneries I use are also from USA.
