Pepper Mayo sliders the Webbco way, another spin on a takeaway favourite.

A Tik Tik boom buttermilk bath overnight, into an original fried chicken coating. Fried till crispy and dusted with Dutch Kip. Risked it with a classic Lemon pepper Mayo then wrapped in a fluffy flat bread.

It ain’t easy being cheesy, this is our spin on a classic Queso.

Cheese base, spicy chorizo and all the best Mexican seasonings cooked in the smoker made for a wicked side or even main event.

An everyday cut made special with some great products.

Dry brined overnight with our favourite red rub, smoked in cherry and glazed with mango habanero just before it finished cooking. Fruity notes made this smoked treat even better.

Dynamite Curry

Curry in no hurry, low and slow melt in your mouth lamb transformed into a decedent curry.

Lamb leg rubbed with Tik Tik Boom, smoked for 10 hours, boated with vegetables and thickened with yogurt. Served on rice with papadums and mango chutney.

Whole squid skewered and marinated in an oriental mix, cooked over coals (plus oak beans). Once cooked a Szechuan mix was sprinkled over the top with chives.

Inspired by both and this was too good to pass up.

Pork belly bathed in juice, sliced and skewered. Rubbed with Greece Lightning and smoked till tender and glazed with Mango Habanero glaze.

The end result was what’s best described as a rib on a stick and the perfect party snack!

With a big ol hammer in the freezer from an SA trip and the inspiration from Meatstock, this was legendary.

Seasoned with Risk it and Fiesta, the shin smoked all day, spritzed with stock and wrapped till tender.

Our take on the more commonly found Ramen in Japan, Shoyu (soy based broth).

Seasoned pork belly slices smoked until tender, topped with spring onion, a soft boiled egg and enoki mushrooms. And of course fresh ramen noodles.

Prawn and Chorizo skewers smoked in the Weber GA with some Myall wood and finished over a fiery grill.

The skewers were seasoned with Kip a Dutch specialty and once cooked a layer of curry ketchup was painted on.

Long time admirer first time cooker, with Rub and Grub adding an excellent coating to there range we couldn’t help ourselves.

Chicken bathed in buttermilk and Franks hot sauce, then coated in the Nashville hot coating. Once fried a rich mahogany hot sauce was painted on and served on white bread. Topped with Housemade pickles (the best kind).

Prawn Dumplings

With amazing seafood at our doorstep and our love for Asian cooking, dumplings were a no brainer.

A combination of garlic, chilli, lemongrass, coriander and ginger were combined with the prawns. A mixture of orientation sauces seasoned the mix along with some Bancoora Bagel Seasoning. Served with a soy based dipping sauce and micro herbs.

The Holy Grail of Surf & Turf

First and foremost, we’re back! It’s been a hot minute and we apologise but your favourite duo have returned. We thought what better way to come back than an absolute monster of a meal.

To start with we have a giant MBS 3+ tomahawk coming in at just under 2kg from our great friends at Austral Meat . Rubbed with Smoky Pastures BBQ ‘risk it’ and ‘sweet dreams’, smoked in the Traeger and flame grilled on the Weber Barbecues Australia/New Zealand GA.

Served with a smoked crayfish from Mures Tasmania basted with garlic butter.

It comes with no surprise that Organic Blades slicer slid through it all like it was hot butter. Seriously a pleaser to use and always a conversation starter!
