Potatoes sweet potato celery lettuce carrots oranges apples mushrooms bananas capsicum bok choy zucchini

SPICED & LOADED PUMPKIN COOKIES
Too good not to share these!😋 I ate 6 right before lunch 😬

Mix:
1/2c mashed pumpkin
1.5Tbsp butter
1Tbsp milk

Blitz:
1 1/4c oats (to almost flour consistency) then add to wet mixture
1/8c pepitas + 1/8c sunflower seeds - then add to wet mixture

Add:
1/5c brown sugar
1/5c choc chips
good sprinkle of cinnamon
dash of nutmeg
pinch of sallt
1Tbsp plain flour

Smooth spoonfuls onto baking tray

Bake: 180 degrees C, 10mins

Dinner in our house tonight - Cauliflower Soup 😋
I love soup nights, got to get them in before summer hits!

Saute 1 onion and 1 leek, both finely sliced
add garlic and saute further
add 1 medium head of cauliflower florets and 4 cups vegetable stock
simmer until soft
blend until smooth
serve topped with crispy fried diced bacon and a good sprinkle of rosemary
