While others are spending their Easter long weekend, here I am rolling spring rolls😩😂 as a food trucker I came to realise that we will miss all the public holidays and celebrations to sell food to the public. But hey! it’s fun and rewarding specially when they come back to give praises and compliments after they taste the food😊😊so who am I to complain? We’re happy to serve people even if it means we’re working on the days that were meant to be a holiday for the rest of WA💕💕

PS. That’s our own recipe of spring roll made with pork and beef mince, some veggies, herbs and spices which I hand rolled and freshly fried as ordered. Best enjoyed with sweet chilli sauce😊❤️

Hello again guys😊here to shed a light about our logo. No food info as we’re taking a break to visit our families but we’ll be back before you know it. Anyway, I’m highlighting our logo “Fiesta Manila”, the symbols, tagline and all the icons in it (sounds boring again 🥱🥱😂)

Disclaimer: this is not a political or religious post😂😂

Let me start with the word “Fiesta”, Spanish word basically means festival/festivities. While “Manila” is the capital city of Philippines. We decided to call our food truck Fiesta Manila because we aim to represent the food that we Filipinos normally serve in special gatherings and on everyday basis. Majority of the Philippine population are Roman Catholics and it’s a habit to attend Sunday Mass in the church. People who attend the mass will exchange greetings of “peace be with you” after the sermon. But because we serve food that we normally have during special occasions, we came up with the phrase “Feast be with you” in reference with the greetings we say after church. The colour scheme and the symbols are based on the national flag (blue, red and yellow). The sun and the stars are also found in the flag. The sun symbolises the whole country while the stars represent the 3 main regions in it: Luzon, Visayas and Mindanao. You would notice there’s 8 sunrays, those represent the 8 provinces who revolted against the Spanish. The vehicle on the logo is our very own “Jeepney” this is the main mode of transportation in Manila and around the country. You could also see the Philippine map in the background. Everything in the logo are well thought and has meaning. Not just random colours and icons we put together( I don’t mean any shade 😂😂) Thanks for reading and we hope to see you soon💕💕💕

Hello again guys😊 I hope by now you know that I will educate you again about my culture and love for food (boring🙄🙄 I know😂) but I feel the need to do it as Filipino food is very under represented here in Australia. Other Asian cuisines such as Thai, Chinese and Indian already shared the limelight not only here but around the world so I’m hoping it’s our turn to shine at least in WA😆 Enough of the talk, have you tried our Crispy Pork? If not, well you’re missing out! This bad boy/girl or non binary thing is rolled with love by yours truly with different herbs and spices. In Philippines, we would call this Lechon Baboy but because “lechon” means suckling pig roasted on a spit and I’m only using pork belly, we just decided to call it Crispy Pork. It also makes it easier for non Filipinos to say it when they order. The suckling pig would normally be placed in the centre of the table as the main attraction in special gatherings and is cooked for hours over charcoal to achieve the crispy skin and tender meat. Our Crispy Pork is cooked in the same manner except the charcoal part😆 but we can assure you that we got the crispy skin and tender meat part of it. Hey peeps this is our very own vegetarian noodles😋😋 Have you tried it yet? Also known as ”Pancit Canton” in my native tongue. A staple dish in every Filipino household on special gatherings specially birthdays. Because we are very superstitious people and believe that the long strand of noodles signify longer life. There are different types of Pancit or “pansit” dishes all throughout the Philippines influenced by the Chinese traders in the early days. Pancit is normally served with calamansi (type of lime) or lemon on the side to squeeze on the dish to balance the saltiness because it’s stir fried with some soy and oyster sauce. But to avoid the mess, you’ve probably tasted citrus in the dish already as I mixed it in prior serving😚😊

Have you tried the Filipino National dish Adobo yet? 😊😋😋

A little bit of a trivia here: Adobo’s original name was “Adobar” originated from the Spanish who colonised Philippines for more than 300 years which means to marinate. Every region and provinces in the Philippines has their own variations. In the Spanish era, refrigerator wasn’t invented yet so the people had to improvise and would cook it in clay pots and bury it in the mud to keep it cool and would just grab a portion each meal time. Adobo is traditionally consumed with steam rice. The vinegar and salt are the most essential ingredients in the dish as it serve as the main preservatives that made the dish last for days. Overtime, Filipinos added more ingredients like soy sauce, bay leaves and other spices to enhance the flavour. Enough of the trivia😂 I bet you’re hungry.
