Apple and avocado salad from My Vegan Cookbook. I adapted it of course and added papaya and orange to the corn, apple and kale from the recipe and didn’t use the avocado, but could have…. Just was distracted by a delicious new salad dressing of blitzed steamed sweet potato and carrot, nooch, miso, balsamic, herbs, lemon juice, tahini and water. Yummy. Thank you Anita from for inspiring me to be creative with my salad dressing. Send me your adaptation of this salad. Oh, I also added millet and lentils on the side. Upping those amino acids!

Great to see a fellow psychologist whose separately has done nutrition studies help people use food to improve their psychological as well as physiological health (go figure… they’re related 🙄). I’d go one step further and look at the evidence for whole food plant based eating …can get plant based omega 3’s from chia, flax, h**p seeds, soy products. cruciferous veg (broccoli and Brussels sprouts), walnuts etc but it’s more complex than that so do your own research or consult/follow a nutritionist eg .cameron and and plant based medicos via , , dr Malcolm Mackay in Melbourne, and a fbook group https://m.facebook.com/groups/PlantPoweredMelbourne/?mibextid=K35XfP. Look also on labels for the emulsifier and citric acid nasties one should really avoid on processed foods. Onion, apple, carrot, coriander, lemon juice…. and beetroot. So many health and nutritional benefits. Iron and vit c pairings, diversity, fresh, all ingredients are fresh grown or easily bought from your farmers market or green grocer. Zero waste. Zero artificial anything

Experiment…. Add some beans eg chickpeas and some nuts/seeds then turn up the speed to blend into a dip!
A range of potatoes from the farmers markets I attend when selling My Vegan Cookbook. I added ground dried rosemary from my garden, aniseeds, ground cumin and herbed salt from my travels in Greece 🇬🇷
I’m such a fan of making, versus buying, my own food in reusable containers. So many reasons including that I like cooking and can make what I want using a range of fresh, unprocessed whole foods with no preservatives/emulsifiers, it’s zero waste and tastes great!! Here’s my dandelion root ‘coffee’ with soy milk and a nutrition loaded breakfast made from: organic oat groats, flax, chia, sunflower seeds, Brazil nuts, almonds, pepitas, sesame seeds, fresh pear, fresh orange, soy milk - that’s a whopping 11 plant points just in the brekky jar! In the course of a week aim for 30 plant points. A plant point is a different type of food/plant where Granny Smith apple and Fuji apple are considered as separate /two plant points. coined this plant points term, and he’s all about the wonders of diversity for gut and mind health, plus he’s the king of fibre. Check him out - he’s sooo relateable and knowledgeable!
Brussels sprouts, zucchini, broccoli, quinoa, smoked paprika, cumin, curry paste, coconut cream
Porridge again :)
Oat groats (organic, crushed)
Chia seeds
Frozen mango and strawberries from excess fruit
Fresh cut apple
Cooked on stove for 5 mins or so with water
Added fresh cut orange, fresh ground flax and soy milk
Mix. Eat.

Baking these beauties for a country get away with friends.
Love making these cookies, especially as they are sooo forgiving. I tend to add something different such as dates or walnuts… in this batch I added sultanas with cinnamon and cardamom as it’s winter in Melbourne, Australia. These taste delicious on their own but super yum with a plant based chilli 🌶️ (yes!) hot chocolate. Try it - melt some choc or mix through some cocoa powder into warmed milk.

Oat (organic pls), soy milk, apple, banana, raspberry, apple, wild blueberries, fresh ground cinnamon, fresh ground flax & chia, toasted sunflower seed
Colourful Sunday Stir Fry with Satay Sauce.
2 cups red cabbage, thinly sliced
1 cup broccoli florets, halved
I broccoli stem, thinly sliced
1/2 red capsicum, sliced
Sauté in water and/or choice of oil with lid on
Satay Sauce made with avail ingredients:
Blitz in a blender then put into the veggies:
2 tbsp cashews
1 tbsp peanut butter
1 tsp sesame oil
1 garlic clove
1 garlic 1 tbsp white wine vinegar
2 tbsp soy sauce
3 large sprigs fresh mint
Too with some peanuts.
Enjoy! Was wanting to eat early as have noticed that late night eating post 7pm leads to disrupted sleep. This was quick and easy. Lmk what else you’d like to put in your stir fry.
