Plastic is out and sustainable alternatives are in and there’s no better time to 'choose to refuse' single use plastic than Plastic Free July.
Easy tips to go plastic free in July
♻️ Take a stainless steel water bottle to fill from the tap wherever you go.
♻️ Look for plastic-free packaging at the supermarket. Make sure you take your own reusable shopping bags.
♻️ Wrap your leftovers in beeswax wraps (you can even make your own) or use a glass jar or container.
♻️ Choose reusable coffee cups.
♻️ Brush better with a bamboo toothbrush
♻️ Skip the straw and choose a reusable bamboo straw. Each year, Australians discard millions of plastic straws.
♻️ Use more reusable products such as glass jars, wood utensils, and use metal tin lunch boxes and containers for storage. Avoid highly processed foods and begin using homemade recipes.
♻️ Buy Loose Fruit And Vegetables. Buying plastic-wrapped or packaged fruits and vegetables can be convenient, but unfortunately it creates plastic waste. Instead, look out for loose fruit and vegetables in your local grocery store, or head to a farmers market or organic store where plastic packaging is less often used.

Recipe: Make Your Own Plastic-free, Sugar-free Muesli this Plastic Free July

Ingredients:
3 cups coconut flakes
2 cups oats
1/2 cup brazil nuts
1/2 cup peanuts
1/2 cup raw almonds
1/2 cup pumpkin seeds/pepitas
80ml macadamia oil (or other high quality, flavourless oil)
Method:
[I soak my almonds and pumpkin seeds overnight to activate them and make them more digestible, and then dry them out before chopping and adding to the mix. If you can’t be bothered with this step or are short of time, just skip it.]
Roughly chop the brazil nuts, peanuts and almonds. Combine in a bowl with the coconut flakes and oats. Stir in the oil and mix well until everything is well coated.
Line a baking tin with baking paper. Spread the mixture evenly over the paper and bake at 100ºC for 30 minutes, until golden. Leave to cool.
Store in a glass jar. It will keep for a few weeks, but I think it is better to make small batches and more often to keep it fresh.

Recipe: Pumpkin and barley soup with crushed hazelnuts

Ingredients
1/3 cup (80ml) olive oil, divided
700g butternut pumpkin, peeled, cut into 2cm pieces, divided
1 shallot, chopped
2 garlic cloves, smashed
6 cups (1.5L) vegetable stock
3/4 cup (150g) pearl barley
10 (2g) sage leaves
1/2 cup (70g) hazelnuts, toasted, skinned, chopped
2 teaspoon lemon juice, plus 1 teaspoon finely grated lemon zest
Method
1. In a large heavy pot, heat 1 tablespoon of the oil over medium-high heat. Add two-thirds of the pumpkin, shallot and garlic and cook for 5 mins or until the vegetables are beginning to soften. Add the vegetable stock. Bring to a boil, then reduce the heat to a simmer and cook, partially covered, for 20 mins or until the pumpkin is completely soft. Transfer the mixture to a blender and puree until smooth. Set the pureed soup aside.
2. Wipe the pot clean and place it over medium-high heat. Add 1 tablespoon of the oil and the barley and sage. Cook, stirring, for 2 mins or until barley is toasted. Carefully, as the pot is very hot and the mixture will bubble furiously, add the pureed soup. Bring the mixture to a simmer and cook, partially covered, for 25 mins. Remove the pot lid, add the remaining diced pumpkin and cook for 20 mins, stirring occasionally so it doesn’t catch on the bottom, until the barley and pumpkin are tender. Season the soup to taste with salt.
3. In a small bowl, toss the hazelnut with the lemon juice and remaining 2 tablespoons of oil to coat and season with salt.
4. Divide the soup among bowls. Top with hazelnut mixture and lemon zest to serve.

Recipe: No bake coconut and date balls
No bake coconut balls contain just two ingredients and they are super healthy. Pop them into lunch boxes, snack on them after exercise and use them to satisfy your sweet tooth.
Ingredients
3 cups desiccated coconut
2 cups pitted dates
Method
1. Place 2 cups of coconut and the dates into a blender or food processor.
2. Process on high speed for 3-4 minutes, pausing to scrape down sides as needed.
3. Remove from processor and roll teaspoon-sized balls. Roll in remaining 1 cup of coconut.
4. Pack in portions for snacks, to put in lunch boxes and keep on hand to satisfy a sweet tooth in a healthy way.
Notes
The coconut in this recipe turns to cocoa butter as it is processed with the dates and binds them together.
You can roll these in more crushed nuts, sesame seeds or even sifted cocoa powder.

Super toasted granola with chewy fruit

Ingredients
8 tablespoons honey
75 g skin-on almonds
300 g rolled oats
40 g sunflower seeds
40 g pumpkin seeds
30 g desiccated coconut
50 g dates
50 g dried sour cherries
50 g dried apricots
50 g dried peaches
Method
Preheat the oven to 150ºC/300ºF/gas 2 and warm the honey through in a saucepan.
Chop up the almonds then spread over a large baking tray with the oats, seeds and coconut.
Pour over the warm honey and mix with a spoon, then pop in the oven for 20 minutes, stirring every so often.
Meanwhile, destone the dates and chop up with the rest of the fruit.
After 20 minutes, add all the fruit, stir once (try not to touch again until it is cool) and put it back in the oven for another 10 minutes. It should be clumping together nicely.
Remove from the oven and allow to cool before breaking it up and storing in jars or airtight containers for up to 1 month. Serve with yoghurt and fresh or poached seasonal fruit.
