Seems as though these 2d cakes are all over the place at the moment. Loved making this. Not sure who to credit for original design but lots of other amazing bakers are doing this design and inspired my client to order one from me. Was happy to oblige with the challenge.

So many DMs asking for my recipe for my blueberry quick and easy one bowl loaf cake perfect for lunchboxes so I decided to post it….. tried and tested many times in my home. Perfect recipe for those who don’t enjoy long baking processes.

Who would like my banana loaf cake recipe next week? It’s a little more involved but it doesn’t even get to cool down in my home.

lemon blueberry loaf cake

Ingredients:
1/2 cup full fat natural Greek yoghurt ,
1/2 cup veg oil ( or any other flavourless oil)
3 whole eggs
1 tsp vanilla
Rind of 1 lemon
3/4 cup sugar
1 1/2 cups plain flour
2 tsp baking powder
1.5-2 cups blueberries

Heat the oven to 150 deg Celsius
Combine all wet ingredients in a bowl and mix well till combined. Add in dry ingredients and mix till just combined. Be sure to not over mix. Dust blueberries in a little flour and add to the mix and fold thru

Pour into a lined loaf tin
Bake for 45-60 min till a skewer comes out clean and cake is golden

Let cool and enjoy…..

Don’t be tempted to use low fat yogurt, you need the fat bc no butter in the recipe and helps keep the cake moist.

Blueberries can be substituted for raspberries.

It’s not an overly sweet cake, I prefer my load cakes this way. If you prefer more sweet up the sugar quantity to 1cup

CAKE TASTING BOXES AVAILABLE THIS WEEKEND........
due to covid lockdowns in melb this weekend I have some of my delicious cake available for tasting. Unfortunately I had the most beautiful wedding cake planned for this weekend. I didn’t have the heart to make the family pay for cake they wouldn’t need. They were going thru enough stress and had no reason to celebrate with 200 portions of cake. As a result I have my delicious lemon mud and raspberry and white choc mud cake available to purchase.

A tasting box will have 4 dessert portions of cake for $20, your welcome to add more portions if you like I have lots available. Single portions a available also for pick up.

Pick up from Reservoir
Delivery may be an option for $10 delivery if within 10k.
