Sweet and Sour Pork
🐖🐖🐖
Ingredients:
700 g pork loin, cut into bite-sized cubes
1 tsp granulated garlic
1 tsp salt
Batter:
½ cup all-purpose flour
½ cup cornflour
1 tsp baking powder
Salt
2/3 cup soda water, ice cold
1 tbsp avocado oil
Sweet and sour sauce:
½ cup freshly squeezed orange juice
450g can pineapple pieces in juice
6 tbsp rice wine vinegar
4 tbsp sugar
1 tbsp soy sauce
1 tbsp corn starch
1 tbsp tomato sauce
neutral oil for stir-frying
2 cloves garlic, minced
½ red capsicum, cubed
½ green capsicum, cubed
1 medium red onion
Salt
Method:
1. Make the batter, by adding in all the batter ingredients. Start with the dry ingredients first, followed by the liquids. See video for consistency. Allow to rest for 20 minutes.
2. Season pork with granulated garlic & salt and set aside.
3. Make the sweet and sour sauce by adding in all the sauce ingredients, and mixing until combined.
4. Heat oil on high heat.
5. Add in the garlic, pepper & onions and season with salt. Stir-fry for 2 minutes.
6. Add in sauce mixture and bring to a rapid bubble for 1-2 min. Allow to thicken. Once thickened, turn off the heat.
7. Add the pork cubes to batter in batches and coat (don’t overcrowd when coating them in the batter).
8. Heat oil to 190°C or drop in some batter and see if it cooks.
9. Cook in batches ensuring not to overcrowd the pot. Cook for 2-3 minutes until lightly golden. (don’t overcook them)
10. Add pork and pineapple to the sauce right before you serve, to ensure it stays crispy. Enjoy!

Tasman Butchers... The Meat Specialists!
Seriously delicious, these juicy, spiced beef meatballs are just bursting with flavour! Simmered in a rich, smoky tomato sauce and covered in a blanket of melted Mexican cheese, they’re a super easy meal to put together! Serve with a side of spicy Mexican rice and some guacamole, or pop them in a crusty roll for a delicious sub!

Tex mex meatballs
Ingredients:
700g Farm88 regular beef mince
2 cup Mexican cheese blend or tasty
½ cup panko breadcrumbs
2 tbsp freshly chopped parsley, plus more for garnish
2 garlic cloves, minced
1 jalapeno, finely chopped
1 large egg
1 tsp ground cumin
Salt
Black pepper, freshly ground
1 tbsp extra virgin olive oil
½ large onion, chopped
1 can crushed tomatoes
1 tbsp chipotle sauce
Method:
1. In a medium bowl, combine mince, 1 cup of cheese, breadcrumbs, parsley, garlic, jalapeno, egg and cumin and season with salt and pepper. Mix to combine and form the meatballs.
2. Heat oil in a large pan over medium-high heat. Add meatballs in a single layer and sear for a couple of minutes per side. Transfer to plate.
3. Add onion to pan and cook, stirring until soft, roughly 5 minutes. Stir in crushed tomatoes and chipotle and bring to a boil. Reduce heat to medium-low and return meatballs to pan. Cover and simmer until meatballs are cooked through, about 10 minutes.
4. Top with the remaining 1 cup of cheese, then cover to let the cheese melt.
5. Garnish with parsley before serving & enjoy!

When you have some extra time to make something really special in the kitchen, Beef Bourguignon is a time-worthy, sure-fire delicious choice, and guaranteed to impress family and friends!

Beef Bourguignon
Serves 6, and roughly 5-6 hours to make….
Ingredients:
1.5kg Farm88 yearling beef diced casserole steak
4 slices bacon, cut into lardons (short sticks)
3 ½ tbsp extra virgin olive oil
2 medium carrots, sliced
1 large onion, sliced
1 pinch coarse salt & freshly ground pepper
1 tbsp plain flour
3 cups red wine
2 ½ cups of beef stock (or enough to cover all the ingredients)
1 tbsp tomato paste
2 cloves, minced
½ tsp thyme
1 bay leaf
11 pickling onions
3 ½ tbsp butter
1 herb bouquet (4 sprigs parsley, 2 sprigs thyme, 1 bay leaf)
500g Swiss mushrooms
Method:
1. Simmer bacon lardons in 4 cups of water for 10 minutes, drain and pat dry.
2. Preheat oven to 200°C.
3. In a large Dutch oven, sauté the bacon in 1 tbsp of olive oil for 3 minutes, until it starts to brown lightly. Remove the bacon and set aside.
4. In batches, sear the beef on all sides and set aside.
5. If pot is looking dry, add more oil, then add the sliced carrots and onions and sauté until browned, roughly 3 minutes.
6. Add the bacon and diced beef back to the pot and season it with salt and pepper. Mix. Sprinkle with flour and mix again.
7. Place in the oven uncovered, for 4 minutes.
8. Remove pot from oven, mix the beef and place back in the oven for another 4 minutes.
9. Remove the pot from the oven and reduce to 150°C.
10. To the pot, add the wine and stock. The liquid should just cover the meat and vegetables. Add the tomatoes paste, garlic and thyme.
11. Bring to a light simmer on the stove. Cover with lid and simmer in the lower part of the oven for 3-4 hours, or until the meat is easily pierced.
12. In the last hour of cooking, bring 1 ½ tbsp of butter and 2 tsp of oil to a medium heat in a sauté pan.
13. Add the pickling onions and toss until they have browned, roughly 10 minutes. Stir in ½ cup beef stock, small pinch of salt and pepper and the herb bouquet.
14. Reduce the heat to low and simmer the onions for roughly 30 minutes, until the liquid has evaporated, and the onions are tender.
15. Remove the onions and set aside. Discard the herb bouquet.
16. Add the remaining butter and oil and bring to a medium heat. Add the mushrooms and cook for about 5 minutes.
17. Place a colander over a large pot. Drain the beef stew through the colander and into the pot. Place the pot with the sauce over a medium heat and simmer for about 5 minutes, until it begins to thicken.
18. Pour the beef and vegetables back into the Dutch oven. Add the pickling onions and mushrooms back to the pot.
19. Pour the sauce over the beef mix and simmer for an additional 3-5 minutes.
20. Serve with creamy mash potatoes. Enjoy!

Looking for a quick and satisfying meal to warm up on a chilly evening? Our Easy Chicken Ramen is the perfect solution! Simple, delicious, and ready in just minutes. 😋🍜
Easy Chicken Ramen
Serves 4
Ingredients:
3 x Hazeldenes fresh chicken breast (skin off)- poached & shredded
1 tbsp olive oil
1 tsp sesame oil
2 tbsp unsalted butter
4 cloves minced garlic
2 tsp minced ginger
1.4 litres chicken stock
2 tbsp light soy sauce
2 tbsp dark soy sauce
1 tbsp sriracha hot sauce- or more if you like it hot
1 tbsp Chinese rice wine
1 tbsp light brown sugar
¼ tsp white pepper
Packet of egg noodles
Toppings:
5 spring onions
4 hard boiled eggs- sliced in half
1 carrot- peeled and cut into thinly sliced strips
1 tsp sesame seeds
2 tsp chilli oil
Method:
1. Poach and shred your chicken breasts.
2. In a large saucepan over medium heat, melt the olive oil and butter together.
3. Add minced garlic and ginger and stir for 1 minute, ensuring the garlic doesn't burn.
4. Mix in the stock, light and dark soy sauce, sriracha, rice wine, brown sugar, sesame oil and white pepper.
5. Cook your egg noodles according to packet.
6. Place the noodles, chicken and carrot into a large bowl.
7. Ladle over the broth.
8. Top each bowl with spring onions and two pieces of egg.
9. Finish off with a sprinkle of sesame seeds and a light drizzle of chili oil before serving. Enjoy!

The key? Patience. Letting it bubble away for over 2 hours transforms the hock into melt-in-your-mouth goodness and unlocks the creamy richness of the peas. Enjoy a hearty bowlful this weekend!
Delicious Pea & Ham Soup 🥣
Ingredients:
1 Fabbris smoked ham hock
500g dried split peas
1/4 tsp salt
3/4 tsp black pepper
2 garlic cloves, minced
2 bay leaves, dried or fresh
1 onion, finely chopped
1 carrot, peeled and finely chopped
2 celery sticks, finely chopped
8 cups water
Garnishes/Serving:
Parsley, finely chopped
Crusty bread
Method:
1. Place peas in your choice of cooking device (slow cooker, stove top, pressure cooker) and place ham hock on top. Scatter all other ingredients around the ham hock, then pour water over everything.
2. Slow cook for 8 to 10 hours on LOW or 6 hours on HIGH. Alternatively, cook for 2.5 hours on low on the stove, or 1 - 1 hour 20 mins in a pressure cooker/Instant Pot on HIGH.
3. Remove the ham hock and shred the ham meat, discarding the bone and any fatty skin. Remove bay leaves.
4. Return the shredded ham to the slow cooker and stir. Taste the soup and add more salt if needed, as the soup gets a lot of salt from the ham hock.
5. Serve garnished with parsley and with crusty bread for dunking. Enjoy!
