We have a delicious recipe which will leave you and your family asking for more! Check out this Pumpkin and ginger soup with burnt butter from Coles 🍽️

Here's what you'll need:
1 butternut pumpkin, peeled, seeded, cut into 5cm pieces
1/3 cup (80ml) olive oil
2 tsp fennel seeds
150g butter, chopped
2 brown onions, thinly sliced
10cm-piece ginger, peeled, chopped
5 garlic cloves, thinly sliced
4 cups (1L) salt-reduced chicken stock
1/2 cup (140g) Coles Greek Style Natural Yoghurt
2 tbs pistachio dukkah

Method:
Step 1
Preheat oven to 200°C. Line a large baking tray with baking paper. Arrange the pumpkin on the lined tray. Drizzle with half the oil and sprinkle with the fennel seeds. Toss to coat. Season. Roast for 45 mins or until the pumpkin is golden and tender.
Step 2
Meanwhile, heat 30g of the butter and the remaining oil in a large saucepan over medium-high heat. Add onion, ginger and garlic. Cook, stirring occasionally, for 8-10 mins or until the onion is soft and begins to caramelise.
Step 3
Add the stock and roasted pumpkin to the pan and bring to the boil. Reduce heat to medium-high. Cook for 10 mins or until tender.
Step 4
Combine the yoghurt and 2 tbs cold water in a small bowl. Season.
Step 5
Melt remaining butter in a medium frying pan over medium-high heat. Cook for 2-3 mins or until golden brown. Remove from heat. Stir in the dukkah.
Step 6
Use a stick blender to carefully blend the pumpkin mixture until smooth. Ladle the soup among serving bowls. Top with the yoghurt mixture and brown butter mixture to serve.

Serve with coriander sprigs and chargrilled Coles Turkish Pide

Pressed for time and need a quick and yummy snack to keep you energised? Try out this Satay Chicken Lettuce Cups recipe from Coles 🍗

Here's what you'll need:
1 tbs olive oil
500g Coles RSPCA Approved Australian Chicken Thigh Fillets, thinly sliced
2 tbs crunchy peanut butter
2 tbs coconut milk
1 tbs sweet chilli sauce
1 lime, juiced
450g pkt microwavable basmati rice
12 butter lettuce leaves
1 red capsicum, seeded, thinly sliced
1/2 red onion, thinly sliced
1 Lebanese cucumber, seeded, thinly sliced
Fresh coriander leaves, to serve
Chopped toasted peanuts, to serve
Lime wedges, to serve

Method:
Step 1
Place the oil and chicken in a large bowl and toss to coat. Heat a frying pan or wok over high heat. Stir-fry the chicken, in batches, for 5 mins or until browned and cooked through. Transfer to a plate.

Step 2
Add the peanut butter, coconut milk, sweet chilli sauce, lime juice and 2 tbs water to the pan or wok. Cook, stirring, until peanut butter is melted. Return the chicken to the pan or wok and stir to coat in the sauce.

Step 3
Meanwhile, heat the rice following packet directions. Divide the lettuce leaves among serving plates. Top with rice, chicken mixture, capsicum, onion, cucumber, coriander and peanut. Season. Serve with lime wedges.

Here's a quick and easy winter warmer recipe to cook in the colder months! Quick Pumpkin Dhal from Coles 🧑🏽‍🍳

Here's what you'll need:
1 tbs olive oil
1 brown onion, finely chopped
1/2 butternut pumpkin, peeled, seeded, cut into 2cm pieces
1/4 cup (75g) korma curry paste
400g can cherry tomatoes
400g can lentils, rinsed, drained
75g drained canned chickpeas, rinsed
270ml can coconut cream
4 stems curry leaves
200g tzatziki dip
Coriander sprigs, to serve

Method:
Step 1
Heat the oil in a large saucepan over medium heat. Add the onion and pumpkin. Cook, stirring, for 2 mins or until the onion softens. Add the curry paste and cook, stirring, for 1 min or until aromatic.

Step 2
Add the tomatoes, lentils, chickpeas, coconut cream and half the curry leaves to the pumpkin mixture in the pan. Loosely cover and cook, stirring occasionally, for 15 mins or until the pumpkin is tender and the mixture thickens slightly.

Step 3
Meanwhile, heat a frying pan over medium heat. Spray with olive oil spray. Add the remaining curry leaves and cook for 1-2 mins or until the curry leaves are crisp.

Step 4
Divide the dhal among serving bowls. Top with the tzatziki, coriander and fried curry leaves.

Bake the sweetest treat with this delicious raspberry cheesecake swirl brownie from Coles 🤤

Here's what you'll need:
500g pkt Coles Double Chocolate Brownie Baking Mix
2 Coles Australian Free Range Eggs
125g butter, melted
250g cream cheese, softened
1 Coles Australian Free Range Egg, extra
1/3 cup (75g) caster sugar
125g fresh raspberries
Coles Red Hearts, to serve
White chocolate ganache
250g white chocolate melts
1/3 cup (80ml) thickened cream

Method:
Step 1
Preheat oven to 180°C. Grease and line the base and sides of a 18cm x 28cm (base measurement) slice pan with baking paper, allowing the 2 long sides to overhang.

Step 2
Combine the brownie mix, eggs and butter in a large bowl. Stir with a wooden spoon until well combined.

Step 3
Use an electric mixer to beat the cream cheese, extra egg, sugar and raspberries in a large bowl until well combined and smooth.

Step 4
Spoon the chocolate and cream cheese mixtures, in alternating batches, into the prepared pan. Swirl with a skewer to create a marbled effect. Bake for 35 mins or until crumbs cling to a skewer inserted into the centre. Set aside in the pan to cool.

Step 5
Meanwhile, to make the white chocolate ganache, combine the chocolate melts and cream in a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Cook, stirring, until chocolate is almost melted. Remove from heat. Set aside, stirring occasionally, until chocolate has melted and mixture is smooth. Transfer to a separate bowl. Place in the fridge, stirring occasionally, for 30 mins or until mixture has thickened. Use an electric mixer to beat the mixture to loosen.

Step 6
Turn the brownie onto a serving plate. Spread the top with white chocolate ganache and sprinkle with hearts. Cut into squares to serve.
