Canelé ✨ Delcious French pastries with custardy interior with deep caramelised exterior.
Our copper Canelé moulds are made in Campania, Italy by where copper has been worked in the region for centuries.
Copper is an excellent conductor of heat which enables this caramelisation to take place.
We carry a range of copper cookware by Cu Artigiana, including jam pots, cooking pots, pizza and farinata trays and focaccia trays.
Canelé moulds are 55mm in diameter and sold in packs of 3. They are available online and in store, with delivery available Australia wide.

‘Fontana’ Wood Fired Pizza Ovens! What would you cook in yours?! 🔥

Shown here is the Fontana Marinara Oven in Black Anthricite, at a customer’s beautiful property in Red Hill.

Fontana wood fired ovens are made in Italy. Available in powder coated black or full stainless steel.

- They are very high combustion and efficient. Only a small quantity of wood and about 30 minutes is required to get up to cooking temperature.
- Less wood inside also equals a greater amount of cooking space inside the oven.
- In between the internal stainless steel lining is 10cm of extremely heat efficient insulation to keep you cooking longer.

The range of Fontana ovens are are available in bench top or with stands - perfect if you don’t have en existing bench or outdoor kitchen.
They are also very lightweight, meaning they can be installed on bench tops and decking.

We have been selling Fontana ovens for the past 30 years, and have a fantastic relationship with the company, importing directly from their factory in Italy to our warehouse.

One of our favourite ways to preserve olives is to use our Ezidri Dehydrator! 🫒
We salt the olives, turning them over every day until bitterness is gone. After that, they are dehydrated for a couple of days and vacuum packed for storage.
The model of dehydrator in the photos is the Ezidri FD1000, which we added some extra drying trays (you can stack up to 30!)
Our favourite way to serve these olives are to heat them gently in olive oil with chilli, garlic and rosemary.
Besides olives, dehydrators are fantastic to preserve apples, chilli, citrus, flowers, pineapple, mango, vegetables, sultanas, fruit roll ups, make banana chips, beef jerky and much more!

Another successful pasta class with Pia Gava making a range of filled pasta!
We had a fantastic time with a full class, with everyone getting hands on and learning to make two types of ravioli, tortellini, and a special demonstration of pasta art
At the end of the class, we all sat down and enjoyed a plate (or two) of delicious pasta from the efforts of the class.

The Fabio Leonardi MR9 Meat Mincer has a strong 1hp motor and comes with a large #22 mincing attachment - Perfect for Salami day!
Fabio Leonardi (FLB) mincers are all made in Italy. They are famously strong and reliable. The motors require no maintenance, and the attachment is made from quality materials - nickel plated cast steel body, with stainless steel mincing plate, knife and tray.

One of our favourite ways to preserve olives is to use our Ezidri Dehydrator! 🫒
After they are dehydrated they are ready to be vacuum packed and stored away.
Our personal version of the Ezidri dehydrator is 20 years old but still going strong. Don’t worry, we sell new ones 😜
Our favourite way to serve these olives are to heat them gently in olive oil with chilli, garlic and rosemary.

Whole Muscle Charcuterie with Peter Booth
We are very excited to have Peter in for this in-depth demonstration.
During the class we will process half a pig, and work from nose to tail breaking down and identifying the different cuts of pork, running through the specific processes each cuts require and their different methods of preparation.
This class will give a fantastic overview of the concept of curing whole cuts of meat and breaking down and utilising the whole animal, specifically teaching to process of making:
🐽 Porchetta di testa – Peter will bone out the whole pig head, and demonstrate how to process it into a delicious Porchetta di testa
🐽 Capocollo
🐽 Rolled pancetta
🐽 Prosciutto
🐽 Hot smoked Bacon
During the class we will be hot smoking a portion of bacon, and at the end of the class, we will sit and enjoy a meal of all the cuts of meat demonstrated, the freshly smoked bacon, salami, cheese, bread, wine and hopefully a good chat and some laughs!

Class dates are:
Saturday 25th May - 10am
Monday 3rd June - 6pm (perfect for chefs and hospo staff!)

About Peter:
Peter lives in Melbourne and works as a lawyer. He has an avid interest in food and writing, and his first book, A Charcuterie Diary, is the first Australian book written solely about home charcuterie making. It has received critical acclaim in Australia and offers incredible detail into curing and preserving meat. He has since gone on to publish two more books.

We are thrilled to have Peter in store to run these classes, teaching the process of curing the whole pig.

COSTANTE IMPORTS SALUMI CLASSES 2024 🤩🐽

We run two salumi classes, both hands on, informative and fun!

• Salami and Fresh Sausage Class:
We will teach you the basics of curing your own meats, even how to make capocollo. We will then go into detail how to make Salami. Each person will take their own salami home to cure, as well as a batch of fresh sausages.

We will teach you the basics of curing your own meats, as well as demonstrating how to make pancetta and capocollo. You will then each have your own capocollo to take home to cure.
