We are loving that cucumbers are having their moment - here’s our recipe for spiral cucumber salad to enjoy whilst the sun’s still (sort of) out🥒
Ingredients
3 large cucumbers
3 tsp sugar
2 large garlic cloves, grated
1 tbsp Miso Tasty Organic White Miso
1 tbsp sesame oil
2 tsp dark soy sauce
1/2 tbsp chilli oil (or 1 fresh chilli, sliced)
4 tsp water
Method
1. Place 2 chopsticks on either side of a clean cucumber and cut through the cucumber diagonally
2. Flip the cucumber over and place on the chopsticks again. Slice the unsliced side vertically
3. In a bowl mix the remaining ingredients and pour over the spiralised cucumbers
4. Marinate for at least 4 hours (if you can’t wait this long we don’t blame you)
5. Enjoy!

quarter finalist used our white miso paste to make this delicious Charred Hispi Cabbage with miso butter, garnished with sesame seeds and chilli flakes. 🤤
We love miso butter and to make it it is super simple. You will need a ratio of 1.5 parts white miso paste to 1 part unsalted butter. Combine the white miso paste and unsalted butter in a bowl and mash together until well combined and that's it. You can then use the miso butter immediately or store it in the refrigerator for later use.

Yesterday, our founder Bonnie taught a cooking class, showing how to make teriyaki from scratch with Milk Street. If you missed the class but want to have a go yourself, the recipe is below. 🍖
Once you’ve made your very own teriyaki sauce, you’ll never go back to store-bought again. All over Japan, yakitori joints serve up meat, fish, tofu and vegetables that have been given the miso or teriyaki treatment. Slightly sweet, richly savory and just the right amount sticky, teriyaki makes a delicious and easy marinade, dipping sauce or stir-fry sauce. It’s so versatile that you’ll want to have a jar of it on hand at all times.
We made a dish of traditional yakitori of skewers with either chicken, prawn or tofu. 🍗 🍤 🍢 The choice of protein is down to preference. If you do not have skewers, that’s also fine. We served it with ginger smacked cucumber salad, and a caramelised onion steamed rice.
For the teriyaki sauce, you will only need 4 cupboard ingredients. So to make great teriyaki, it is about choosing quality ingredients, as the technique is very simple.
Ingredients
1 cup of Sake
1 cup Mirin
1 cup Soy Sauce
0.75 cup Sugar
1 thumb of ginger, peeled and sliced into coins
You will also need a 500ml sterilised jar if you are not using the sauce immediately.
Method
Using a heavy-bottomed medium sized saucepan, combine the sake and mirin and simmer for 1 min on medium heat. This removes some of the harshness of the alcohol.
Add the soy sauce and sugar and bring the heat to boiling and then bring down to a simmer for another 10-15 mins to reduce and thicken.
When the sauce starts to show bubbles rising to the surface the sauce is ready. Turn off the heat and remove from the pan. Pick out the ginger pieces. The sauce will thicken as it cools.
If you are going to use it mainly for marinading, you can keep the sauce fairly thin, but if you want to use it to glaze, then simmer for longer to create a thicker sauce. Remember that it will continue to thicken further on cooling, and when kept in the refrigerator.
You can use this teriyaki sauce in stir-fries, as a marinade, or as a glaze to pan-fried dishes. Once cooled, you keep the sauce for 2-3 weeks in the fridge. ✌️

We do 🙋🏻♀️ especially when they are heart shaped 🫶🏻 We made some on recently as part of our bento box and they went down a treat 🍱 😋 said he loves the egg hearts and of wanted to try and take my bento box through airport security 🛫
Tamagoyaki is a slightly sweet rolled omelette which doesn't have many ingredients and is so simple to make. It is all about the technique of rolling the omelette carefully.

Miso is a fantastic match for rich oily fish like salmon, mackerel, and tuna and our umami rich miso flavours are pumped up with the addition of harissa, sweetened with a little maple syrup and a splash of balsamic vinegar. This is a fantastic marinade for fish or rich meats.
