DUM BIRYANI—— WHAT IS IT???

Normal biryani is typically cooked by layering the rice and curry/meat mixture in a pot and then cooking the entire dish together over direct heat. The ingredients are cooked separately and then assembled and cooked together.

Dum biryani, on the other hand, is cooked using a more elaborate "dum" or "pot-in-pot" method. In this method, the partially cooked rice and curry/meat mixture are layered in a pot, which is then sealed tightly and cooked over low heat. The pot is sealed, trapping the steam inside, which slowly cooks the dish through indirect heat. This results in the flavors infusing deeply into the rice and meat.

The dum biryani cooking method is said to produce a more aromatic, tender, and flavorful dish compared to regular biryani. The long, slow cooking process allows the spices to meld together and permeate the ingredients thoroughly.
