Hi folks, there has been a bit of a run on the subscriptions in the days since my last update.

This has led to a few sizes of tees run out, which is a part of the process when choosing a subscription.

I have since updated the online store with new stock levels, so if you missed out you are welcome to give it a crack now.

Finally, some progress! Starting to assemble the glycol pipework, which is not something I have a lot of experience in. There's a lot of standing around and scratching my head.

Hopefully getting this done over the next week or so, then the cellar tanks start to go in place.

So uh.... Thank you for your patience.

The good news is that I finally found two trades willing to come help out with this tiny job. Just over 6 weeks ago the brewery pad was laid, and this morning I got it covered with epoxy.

Now we can really get started putting all the stainless together. First up, the glycol system, then the tanks go in place. Then the last big job will be the sparky getting it all hooked up.

From now you can expect to be updated much more frequently, as we are getting to the point where the work can be done my me and some mates.

A whole bunch of expensive holes in the ground. Next step: a concrete pad for the brew deck.

I definitely underestimated the scope of the job I'd laid out for the plumbers, but I reckon this might be the biggest part of the install ticked off.

Slow progress is still progress.

We are long overdue for another update.

Hey Everyone - firstly, I would like to thank you all for your patience, words of encouragement, and support over the last 9 months. I know I promised subscribers an eventual 24 beers, but I have had a few budgetary wins so I reckon I can slip in a couple more as a token of my gratitude.

Secondly, I have had some fantastic news this week. The local council has approved Evil Mega Corp’s building permit and food business application. This means that the warehouse will finally start to take shape - trade waste, concrete slab, cool rooms etc. There’s a long list of items to become compliant as a food business, because beer is classed as food. (Which would have been welcome news to me in my 20’s.)

In a few months once that has all been completed, the next task is to put together the brewery itself. Install and commissioning should take a month or so, and then the final hurdle of attaining a licence to produce alcohol from Racing, Gaming and Liquor. The Trade Waste Application (sewer stuff) has been conditionally approved recently also. The plan is still for the first beers to come out Q3 of 2022.

Part of the cause for this glacial pace has been due to a misunderstanding with the council, where I was told that I needed a Development Application. That was resolved after about 8 months of emails back-and-forth. Part of it was caused by the limited budget that puts professional help with the permit process out of reach. And, probably the largest part was due to my personal inability to do paperwork.

However, that time has not been wasted. Dozens of recipes have been written and plans drawn up, but perhaps the most exciting thing has been the acquisition of a 5L rotary evaporator, or rotovap.

For those not familiar, this is a piece of equipment that allows for distillation of essential oils and flavour extracts at ambient temperatures without destroying the most delicate components. Think of it like the difference in flavour and aroma between stewed apples and a freshly cut Granny Smith. In terms of beer - the palate of potential flavours has just expanded immensely. Fruit, flowers, seeds, herbs, spices - all of these things and more are now options.

And, of course, it means some weird and wonderful new ways of using hops.

Anyway, I have rambled on long enough. I don’t have any decent pics of the warehouse yet because it’s just full of tanks, equipment and boxes of merch, but please check out the final (and approved) floor plan.

I'm gonna make this a beer label. What style though?

G'day folks. Sorry the page has been quiet for so long, I've been very busy with the day job and not spent enough time on this project. Currently drinking a barrel aged stout to celebrate finally submitting my building permit!

Had a few delays with the development application, and a lot of procrastinating too. Let's hope the city of Cockburn is better at their time management than I am. After this step, the tanks go in place and then it's just one more hurdle until I can start making beer.
