Cured King Fish (Hiramasa), Thai green chilli Nahm Jim, Infused coconut milk, Pickled bitter melon and Shallots, garlic and chilli oil

The commonly dish in Thailand serve it with raw prawns and called it “Goong Chae Nahm Pla” (way more spicy than what we are doing here! So you are safe!)

We want to make this dish very refreshing for the Spring season. Please come and try our version of “King fish” 🐟

🚨🚨 Special Snack 🚨🚨

Stuffed Taro : Prawns, grated coconut, kaffir lime, coconut batter, ajad cucumber relish

An old recipe first found during the King Rama II, Ayutthaya.

In Thai we would call this dish “KHANOM KANG KOW🦇 “ which means Bat snack in English, Although we would not use any bat meat for the dish 🤪.

The reason behind the name of this dish was the shape. They look like a bat spreads their wings (like a triangles)

In the later era, Thanpuying Plian Phasakornwong, the owner of the cookbook of gourmet cooks 1908-1909 (ตำราอาหารแม่ครัวหัวป่าก์ พ.ศ. 2451-2452), added finely ground boiled taro to the dough wrapped in the filling, increasing the texture of the dish to have both the savory taste of the shrimp and the softness of the taro meat. The sweet aroma from the coconut paired with the sweet and sour Ajad becomes ”White Bat“, a snack with an exotic but mellow taste that invites you to savor another bite.
