My steps for making this delicious fraisier.

Are we strawberries-nut or what?? Because we had a full week of strawberry cakes :))
To be honest we are but we just had too many to use. We came home with lots of strawberries after going strawberry picking at which were absolutely sweet and delicious and kept so well.
So let's say is one of the latest one ( for this month 😂)
Last celebration cake for my 7 years old..oh yes he is so lucky to have a min that made him 3 be cakes..well cupcakes, a tart and a cake.
I present you the classic fraisier with a twist...I made a pain de gènes instead of génoise and a mascarpone+crème anglaise cream instead of a mousseline (or a diplomate).
I am in love with strawberries and so is my 7 years. And how lucky we are that is strawberry season here in WA.
We continue the bd celebration with a strawberry and pistachios tart for our family dinner. Sushi and strawberries on the menu. Oh and lots of giggles 😂 What else do you need? 😉

It is a 6" vanilla bean cake with Swiss meringue buttercream
Lemon meringue tart: lemon sugared sweet pastry baked upside down, almond praliné cream filling +lemon crémeux , lemon jelly and smooth Swiss meringue.

Macarons shells are such a delicate biscuit but such a beautiful one. Do you know that macarons are best consumed 48 hours after being baked and filled to have reached the maturation stage? At this stage they are just perfect. Soft inside, crispy outside, with the cream melting in your mouth.
