Every year on July 28th, Peruvians come together to celebrate their most significant national holiday, Independence Day! This joyous occasion commemorates the day when Peru’s founding father, Jose de San Martin, proclaimed the country’s independence from Spanish colonial rule in 1821.

This year, there’s double the reason to celebrate with International Pisco Day / Día del Pisco falling on the same day as Peruvian Independence Day!

DIA NACIONAL DEL CEVICHE 🐟🍄

It's National Ceviche Day! Celebrate Peru's national dish at Lima Cantina this weekend.

Ceviche originated over 2000 years ago, when the Moche people “cooked” raw fish in tumbo juice and seasoned with aji and salt. It was later refined by the Incas, who marinated raw fish in chicha, a fermented corn beverage. The ceviche we know today was born when the Spanish conquerors brought limes to Peru.
