Humblebee Coffee is an independently owned coffee roaster based in the sunny city of Perth.
The recipe for the very best cup of coffee could not be more simple: small lots of coffee beans, roasted in small batches, and served fresh. We micro-roast and taste each batch to assure you have the best possible coffee experience. Shakiso, in Ethiopia’s scenic south within the Odo Shakiso district, is home to some wonderfully typical Ethiopian specialty coffees as well as two major mining stations, one of which produces over 3,500kg of gold annually.
The district is bordered by lush river systems, flourishing with iron-rich soil and ideal temperatures. This is a washed process coffee, where the cherry is removed & the fermentation can take up to 3 days.

This washed coffee hails from Thunguri wet mill in Kenya and offers a juicy & sweet blackberry hit. Bursting with wonderful acidity, this coffee is perfect for fans of filter coffee that has a fruity punch.
Thunguri wet mill is part of the Kibirigwi Farmers Cooperative Society. This coop has over 6800 active small-holder farmer members.
Kirinyaga, in Central Kenya, is home to Mt. Kenya. Many rivers run through the region and the soil is rich and volcanic, providing smallholders and cooperatives with the resources to grow and process some of Kenya's most fruit-forward coffees.
Microlots from Kenya are traceable to either the factory level or individual farm level (when possible), and are selected basis cup score. Our green buyer for Kenya typically takes up residency in Kenya during the harvest due to the sheer number of samples to be cupped and selects the best of these lots to purchase as microlots (fewer than 100 bags).

La Paz, an area famous for coffee production in Honduras, is high in elevation with cool temperatures. These factors cause coffees to ripen slowly, developing sugars that are then processed in these comfortable climates.
Roger Antonio Domínguez Márquez owns several farms in La Paz, Marcala. He collaborates with his family and also works with his neighbours to source coffee, paying them significantly more than intermediary buyers.
He cultivates Catuai and Bourbon with approximately 18,000 coffee trees. The cherry is depulped on the same day, dry fermented for 18 hours in tanks, washed three times, and then dried on raised beds for 12-15 days on average.

Our Pulped Natural Brazil has just recently hit the shelves! Crisp and sweet with notes of Toffee Apple, White Nectarine and Cacao, this coffee goes down so easy especially as we move into the warmer weather.
The Bateia region in Castelo, Espirito Santo, historically known for gold mining, is now renowned for its specialty coffee and welcoming producer families. This coffee hails from the Mountains of Espírito Santo in the Bateia district.
Marcos Tomazini is a generational coffee farmer who operates the farm his father, Antonio, purchased 50 years ago. Tomazini begins harvesting when 70% of the coffee cherries on a given tree have matured. They are then floated and sorted before being depulped. Although the skin of the coffee cherries is completely removed, only a portion of the mucilage that surrounds the bean is taken.
By leaving the sticky, honey-like mucilage still on the bean whilst it is drying, and ensuring a careful monitoring of moisture, we can enhance and develop the intrinsic flavours of the coffee alongside increasing its sweetness and body.

This cold, wet weather calls for our delicious & warming Hojicha latte. Grown in the tea fields of Wazuka, Japan, green tea is slowly roasted over charcoal producing a toasty, nutty and sweet flavour. This roasting process also lowers the caffeine. Combined with silky steamed milk (try oat milk!), this is the perfect treat for those looking for a non-coffee option.

In our newest Natural Ethiopian you will find notes of cooked nectarine and bergamot, along with a winey acidity and a pleasant syrupy sweetness.
Testi Ayla Washing Station serves about 375 smallholder farmers in the village of Bombe in Sidama, near the Bombe Mountain. Producers here own an average of 2.5 hectares and grow varieties such as Mikicho and Setami, which are local coffees.
The washing stations serve as many as several hundred to sometimes a thousand or more producers, who deliver cherry throughout the harvest season. The majority of smallholders will deliver their coffee in cherry to a nearby washing station or central processing unit, where their coffee will be sorted, weighed, and paid for or given a receipt. Coffee is then processed, usually washed or natural, by the washing station and dried on raised beds.
The Sidama region is known for producing the most coffee at the highest grades in Ethiopia, and the geography explains why this is. This region spreads across fertile highlands, where half of the land is cultivated. The surrounding rivers and lakes along with the very high elevation results in cool weather and fertile soil. These factors, in combination with over 100 inches of rainfall per year, cause the coffee to ripen slower than in any other region in Ethiopia.

We have another totally delicious coffee from the team at Espigao farm, this one being an anaerobic natural with tasting notes of ripe plum, cardamom sugar, bakers chocolate & mulled wine.
Within the Cerrado Mineiro, Espigao farm has an ideal terroir with mountainous terrain, high altitudes and a good rainfall index favouring the cultivation of specialty coffee with supreme aromas and flavours.
Producer Gil Cesar de Melo values and respects every forest area surrounding his farms and encourages his employees to also preserve and take care of the environment.
The coffees from Espigao Farm go through a rigorous process of quality, from the initial stages of production. From the crops, to the processing method, until the preparation of the lots post harvest. Resulting in very high quality coffee.

Do you stir your espresso before drinking?
Crema is mostly Co2 and coffee oils resulting from the high pressure of pulling an espresso shot, on its own it can be quite harsh and bitter.
We recommend stirring in the crema to incorporate the whole espresso, resulting in a more balanced and harmonised sip.
