Step by step… that’s a little preview on how our ravioli are produced. With no machine used we are always attentive on our production. Made one by one sometimes they can be a little less than perfect and not all same looking but thats the beauty of the artisan trade!

As an added bonus they are made with eggless pasta and no cheese added… so they are a good option. But fear not as the taste and consistency hasn’t been affected!

Besides the usual suspect , tagliatelle, pappardelle, spaghetti, linguine etc, we offer a variety of fresh specialty pasta all uovo, artisan made using only local fresh ingredients
And include paccheri, mafalde (long) e mafaldine (short) fusilloni, campanelle, mezzemaniche, chitarra (square spaghetti) and also squid ink variety made from 100% squid ink paste and NO COLOURING!

GENOVESE is a very slow braised beef and onions stew, which usually makes a complete meal when you use it as sauce for the Ziti pasta,
This dish iusually sits on Sunday lunch on most tables of the city of Napoli

We had a bit of fun today. Walter is not like that in real life. I think!!!!
So we are lucky enough to know a very well known gentleman that has touched your life one way or another that goes by the name of Vincenzo Garreffa that we occasionally help with his life mission charity Lifeline WA and the other day he sent us a surprise box of lamb shank, that we slow roasted and we add a bit of our panfried ricotta gnocchi on the side… let me tell you life is good.

Let us tell you a bit of story about our slow braised BEEF CHEEKS PANZOTTI .. it all started about 20 years ago in the back alley of a than famous restaurant while the head chef was on his coffee break. Both sitting on a chefs lounge (the iconic milk crate) putting ideas together for a new ravioli. That restaurant is now unfortunately no more but the beef cheeks panzotti is still standing strong and one of our most popular one, and we still make them the same way, by hand, as we did when it all started that cold thursday afternoon of 20 years ago.
Great night showcasing our cavatielli with the italian sausage ragu’… all for a good cause, get behind Lifeline WA it is needed more than ever. Thanks for the invite Vincenzo Garreffa the energy that you put into this events is just amazing!
