🚨COLLAB ALERT🚨

Some seek a clear path in life, other delight in the hazier side of things. We all know which road Simon is going to take!

Introducing:
Bright Tank Brewing Co / Oxford Cellars
LEED THE WAY - HAZY IPA

Upon first sip, this hazy IPA tickles the nose with the aroma of freshly mowed astroturf and a hint of unicorn giggles. The palate is immediately struck by a wave of tropical fruit salad that seems to have been blessed by a mystical pineapple shaman - Simon perhaps? Perhaps not, he’s not yet a fully certified shaman.

Notes of overenthusiastic kumquats, interspersed with whispers of existential mangoes, dance on the tongue. Not “dance” in the traditional sense, but that kind of full-body dry heave that’s reminiscent of a Seinfeld episode. If you don’t know the reference, drink the beer. You’ll get it eventually.

The finish is long and complex, reminiscent of a foggy morning in a marshmallow factory, leaving behind a lingering impression of citrusy dreams and a subtle aftertaste of lost hopes and forgotten abdominal muscles.

Truly, a beer that challenges the very essence of reality itself by moving the needle just slightly adjacent to where you thought it was before.

It cannot be overstated how magnificent these wines are, easily holding their own on the national - and indeed the world - stage 🥂

Specializing in creating quality sparkling wines from premium parcels of Margaret River fruit, this stunning range of sparklings are created by the méthode traditionnelle - a traditional French winemaking method. All wines are aged on lees for several years, enhancing their character and complexity while retaining lively, fresh fruit flavours.

LA CACHE 2014 ROSE
Blush pink in the glass, its wild red fruit, cranberries and ripe pomegranate aromas are complemented by subtle toasted brioche and sweet herbal sage notes. Plenty of pomegranate and cranberry flavours on the palate are complemented with a beautifully smooth mouth-pleasing mousse of fine, delicate bubbles all wrapped up in a juicy, yet dry finish.

LA CACHE 2012 CHARDONNAY PINOT NOIR
A bright, beautiful pale gold in colour, this 2012 wine looks fabulously fresh, showcasing beautiful aromas of fresh baked sourdough, preserved lemon, hints of sweet spice complexity and a zippy saline note at the end. On the palate it’s all deliciously tart lemon and green apples, with an elegant, gently creamy mousse and lingering crisp finish.

LA CACHE 2016 BLANC DE BLANC
Pale gold in the glass, with a super-fine bead, it shows bright and fresh on the nose, with notes of lemon curd, toasted brioche and fresh hazelnut. The toasted brioche notes follow through into the palate, and are complemented by some light yet creamy on the mid- palate notes of lemon curd and fresh lime. The fine mousse, and layers of texture from the extended lees ageing finish off an extremely food-friendly, elegant glass of bubbles.

LA CACHE 2008 SPARKLING SHIRAZ
Rich fruit loaf and spicy Christmas Pudding aromas join rich cherry and plum notes drifting up from the glass, on the palate the softly spicy, generous dark fruit flavours are encased in fine, mouth- pleasing bubbles. Refined and elegant, with silky tannins and a long clean finish, our La Cache Estate Sparkling Shiraz finishes with lingering vibrantly spicy fruit flavours.

MADRE MIO!

Ensamble is Madre Mezcal’s centrepiece. It’s a blend of Espadín and Cuische, the rare, wild Agave that only accounts for 1-2% of Agave species. The lion’s share of the blend is crafted by Jose Ines Garcia Morales and his family in San Dionisio, with a bit of Cuishe supplied from the Vazquez palenque in Miahuatlán.

A departure from the overtly smoky Mezcal that abounds, the blend of sweet Espadin and piquant Cuishe is designed to be a perfect first taste for a new Mezcal drinker, as well as a great everyday sipper for the Mezcal aficionado. As the flavours unfold, you seem to taste something different with every sip: herbal and smoky notes, sage and minerals and sweet earthy fragrance. The finish is clean and lingering, underpinned by subtle smoke and floral flavour.

Each small batch release is bottled in recycled glass and hand numbered.

IT’S BACK AND IT’S BIIG!

The first beer ever brewed by Pirate Life Brewing is big, bold and bitter – just the way we like it.

Brewed with premium malted barley, wheat and a blend of American hops, the DIPA (as it’s affectionately known) is a favourite amongst PL die-hards.

It pours honey gold, with a persistent head of foam. Expect aromas of mango, toffee and pine. Once gulped, tropical fruit pairs with an assertive bitterness and a rich malty finish.

Made with real lemon, lime, sherbert, and over 60kg of sour watermelon candy! One Drop have turned the dial waaaaay up by souring it with 3 types of lactobacillus and rounding it out with a splash of real watermelon juice.

Mischief Brew have teamed up with the infamous Sultan of Spice and all around hot tamale: Mat from Mat's Hot Shop. Mat makes the most delicious hot sauce in the country and runs a hot sauce shop and tasting room in Collingwood, Victoria.

This Piña Picante soda is a riff on one of Mat’s epic sauces. Keeping true to the original recipe, you can expect to find big hits of pineapple, ginger, lime, coriander and a lick of red habanero.

This pairs BEAUTIFULLY with tequila or rum, but for fans of a spicy margarita, check this recipe out:

30ml Tequila
15ml Lime juice
5ml Piña Picante sauce - or your fav spicy dab
90ml Piña Picante soda
Lime wedge garnish and salt rim

Each can has no less than 2 and a third individual Kensington Pride Mangoes, which are then blended into one of their biggest sour bases to date.

This time around, everything has been doubled. Double the lacto, twice the ABV, and an overhaul of One Drop’s already absurd fruit dosing rate which will have you doing a DOUBLE TAKE 😂🫠.
They have managed to pack a mind-bending 420 grams of mango into EVERY litre. With the oozing fruit, puckering tartness, and a heady tropical rush this beer is a jedi mind trick on the soul.�

This SUPER small batch, barrel-aged stout from Freestyle Brewing is easily one of the best WA produced stouts going, and we are lucky enough to have a few cans in store!

Sure it’s a kabillion degrees outside, but there will always be a chilled place in our hearts for this Dark Rider!

YEAST your eyes on these bad boys!!!!

Hawkers FROM YEAST TO WEST series is a careful, controlled examination of how three different yeasts attenuate the same base beer, what nuances each bring to the table and how they affect the final product.

US-05 WEST COAST IPA
Using that stalwart yeast of craft beer to create an impeccably balanced and quintessential IPA. It means you’ll find a combination of pine, resin, grapefruit and light floral notes drift across the palate before a clean bitterness kicks through.

KVIEK WEST COAST IPA
An incredibly juicy affair, with lush mango, melon and tropical punch bowl all coming together as one.

THIOLISED WEST COAST IPA
Making use of a strain developed to pump out more of the highly aromatic thiol compounds common in heavily-hopped beers. Like with the Kveik, it’s quite a juicy beast but rather than being heavy on the tropical, it’s more a mix of orange and stone fruit that’s been added to the blender while a touch of pine and fresh-cut grass joins in.

GHOSTS APPEAR - OAT CREAM IPA
Using a higher oat content alongside a generous addition of lactose we’ve created a pillowy, sweet body to show off a truly experimental hop combination. Using a base combination of Amarillo and Mosaic, they’ve created a safety net of stone fruit, citrus and bubblegum notes before adding a larger addition of Ekuanot hops - a bright, sparkly hop known for a flavour profile that includes lime, berries and herbal characteristics to create a standout Oat Cream that is as easy drinking as it is complex.

INTERNATIONAL WATERS - OAT CREAM IPA
They’ve combined Sabro, BRU-1 and Motueka selected during that trip to New Zealand to create a truly unique flavour profile of coconut, lime and sweet pineapple. This beer also sees the most dramatic change to their whirlpool hop addition practices and increased dry hop quantities to bring you potentially their creamiest, fruitiest Oat Cream IPA to date.

KINDA LOST - NEIPA
The name of this beer is an ode to how the crew at Mountain Culture felt whist brewing it - kinda lost. But that’s to be expected because for this brew, they got right out of their comfort zone, trying some new experimental processes they picked up while working with some of their favourite overseas’ breweries.

Firstly, they’ve increased the oat content in the malt bill to their highest level yet, so high in fact that they maxed out the mash tun! Then they used new dry hopping temperatures, which has resulted in one of their thickest and creamiest NEIPAs to date.

Adding Idaho 7 and Centennial late in the whirlpool, alongside fresh, hand-selected Comet, BRU-1 and Cashmere in the dry hop, creating huge aromas of freshly squeezed orange juice, pineapple and a hint of melon.

Legend has is that over a hundred years ago, in a tropical Australian manor, the Lamington was accidentally created when a maid dropped her governor’s favourite sponge cake in a vat of melted chocolate.

Since then, it’s become an icon, so how better to celebrate our nation’s signature sweet than to imbibe it in liquid form!

New Norfolk Distillery’s MOS AUSTRALIS - LAMINGTON LIQUEUR combines notes of chocolate, vanilla and coconut, blended in our sugarcane spirit and for today’s modern rebellious spirits - boosted with a dollop of sweet strawberry jam.
