This recipe is a perfect balance of Australian, Wild Caught fish and rich, velvety mash—comfort food with a coastal twist. Try it tonight and elevate your seafood game!
Mediterranean Snapper with Creamy Mash
- Serves 2 -
Ingredients
2 Tropical snapper fillets
1 cup mashed potatoes (prepared)
1/2 cup sundried tomatoes, chopped
2 tablespoons olive oil
1 tablespoon fresh basil, chopped
2 cloves garlic, minced
Salt and pepper, to taste
1 tablespoon lemon juice
Steps
1. Begin by preparing the creamy mash: peel and chop potatoes, then boil until tender. Drain, add butter, milk, and garlic, then mash until smooth. Season with salt and pepper.
2. In a skillet, heat olive oil over medium-high heat. Season snapper fillets with salt and pepper, then add to the pan. Cook for about 3-4 minutes per side or until golden brown and cooked through.
3. Add chopped sundried tomatoes and basil to the skillet during the last minute of cooking, allowing them to warm through. Drizzle lemon juice over the fillets.
4. Plate the creamy mash, then spoon the sundried tomato mixture on top. Carefully place the snapper on top of the sundried tomatoes & mash.
Serve immediately and enjoy your Mediterranean-inspired meal!

Celebrate spring with this vibrant sardine, onion, and lemon tart appetizer. Crisp pastry envelops sardines, caramelized onions, and zesty lemon, creating an appetizing bite that bursts with flavour. Perfect for gatherings or a light starter, this elegant dish effortlessly showcases seasonal ingredients.
Sardine, onion & lemon appetizer
– makes about 6 servings –
Ingredients
• 1 sheet puff pastry, thawed
• 500g Catalano’s Whole Sardines
• 1 medium yellow onion, thinly sliced
• 1 lemon, zested and juiced
• 2 tablespoons olive oil
• 1 teaspoon fresh thyme leaves
• Salt and pepper, to taste
• 1 egg, beaten (for egg wash)
• Fresh parsley, for garnish
Steps
1. Preheat the oven to 200°C.
2. On a lightly floured surface, roll out the puff pastry to fit a 9-inch tart pan. Press the pastry into the pan and trim any excess around the edges.
3. In a skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook until caramelized, about 10-12 minutes. Stir occasionally and season with salt and pepper.
4. Once the onions are caramelized, add the lemon zest and juice, along with the fresh thyme. Mix well and remove from heat.
5. Arrange the butterflied sardines evenly over the tart crust. Spoon the caramelized onion mixture on top, ensuring an even distribution.
6. Brush the edges of the pastry with the beaten egg for a golden finish.
7. Bake in the preheated oven for 20-25 minutes or until the pastry is golden and flaky.
8. Remove from the oven and let cool slightly. Garnish with fresh parsley before slicing.
9. Serve warm or at room temperature as a delightful appetizer.

Francesco instilled a hard work ethic and strong passion for the best Western Australian seafood into his family, and this has been the benchmark for the company ever since.
The fish mongering family is now headed by Francesco’s two sons, Nick and Paul, who act as mentors to Francesco’s four grandsons David, Andrew, Josh & Mark, together they have over 160 years experience.
