Rather than travelling opt for our local, personalised, and hands-on approach to learning. Our SIT30821 Certificate III in Commercial Cookery training offers practical classes every Monday in our on-site commercial kitchen. Apprentices will be given the opportunity to obtain a wide range of cookery skills and gain comprehensive knowledge of kitchen operations to prepare food and menu items.

Your apprentices will develop discretion and judgement, working with independence and under limited supervision. They'll follow plans, policies, and procedures, to guide hands-on activities, preparing them for real-world culinary experiences.

Upon completion, this qualification opens pathways for your apprentices to pursue careers as commercial cooks in various establishments, including restaurants, hotels, clubs, pubs, cafes, and coffee shops.

🍳✨ This week in the training kitchen ✨🍖
Today our talented apprentices are diving into the art of Using methods of cookery and Preparing meat dishes. 🎓🔪

👨‍🍳 Practice Makes Perfect: Our apprentices understand that perfection comes with practice! That's why they are taught all essential preparation techniques and cookery methods. The methods of cookery covered this week are braising and steaming, creating a mouth-watering dish of Sausages with pear and potatoes, and a delectable steamed fish dish. 🐟🍐🥔

🥩 When learning to prepare meat dishes, apprentices learn a spectrum of meat preparation techniques—de-boning, trimming, Frenching, portioning, marinating (wet and dry), larding, mincing, tenderizing, tying, skewering, and both wet and dry aging! Plus, they cook up a storm with beef, kangaroo, specialty meats, lamb, pork, and offal. This week’s recipe is Pork and parmesan meatballs. 🍗🔥

Jobs and Skills Australia (JSA) (https://www.jobsandskills.gov.au/) is currently developing its Skills Priority List for 2024, which will assist policy makers to understand the skills needs of the Australian economy and will inform JSA analysis and advice on potential policy responses to shortages in the Australian labour market.

👉JSA is seeking input from stakeholders with on-the-ground knowledge and experience of recruitment activity across industries to identify occupations in shortage and to produce the Skills Priority List for 2024.

The survey is open to a wide range of stakeholders, including:

The team at Jamworks is so very excited to announce that apprentice Michael is now fully qualified as Chef.
Michael’s journey started with us on 2nd Sept 2017 as a kitchen hand.
He soon found a passion for food and started a school based apprenticeship.
Every Tuesday saw Michael attend the Queensland College of Wine Tourism where he completed his training.
Once Michael completed grade 12 he took on a full time position here at Jamworks.
As the years flew by Michael has grown from strength to strength. Now he is managing every facet of the cafe kitchen at Jamworks.
