Hey guys today i am sharing my ramadan menu with you 😊. Been wanting to post this for few days now but ive been very busy, and totally forgot about it. So today i am finally posting it and i hope this will help you with your planning.
As a working mum i cannot deal with the chaos in ramadan so i have to plan ahead. And thats exactly what i do every year. I plan a menu because i cannot stress thinking what i am going cook so i found this way so easy and less stressful. You may find repetitive dish on my menu but in ramadan some dishes must be on the table every day. Example for us we have fatteh, salad, chips and kibbi nayeh every day. For the salads i have written salad but i can make any kind of salad i like. Sometimes i can rotate days or add dish or eliminate dishes it depends on the day and on my mood 🤣🤣. Ok guys so let me brag about this again😁😁😁. I love this shawerma sandwiches guys the chicken in that sandwich is so soft have it with extra pickles and extra garlic OMG YUMMMMMMM 🤯🤯🤯. Ingredients

1 1/2 kilo chicken breast cut into strips
1/4 cup lemon juice
1/4 cup white vinegar
1/2 cup yogurt
1/2 cup vegetable oil
1/2 tsp garlic powder
1 tbsp paprika
1/2 tsp tumeric
1 tbsp shawerma spices
2 tbsp chicken spices
Black pepper
Salt

Instructions

Add all the ingredients on top of the chicken. Mix it very well. Cover and put it in the fridge for 3-4 hours.
After 4 hours add 1 tbsp of oil into a large skillet and cook your chicken strring occassionally until all the marinades dry and the chicken is tender. Enjoy

1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, room temperature
125g cream cheese, room temperature
2/3 cup granulated sugar or 10 tbsps
2 large eggs
1 tablespoon vanilla extract
2 tablespoons lime zest
1 cup fresh blueberries
For the icing we need:
125g cream cheese, room temperature
4 tablespoons unsalted butter, room temperature
1 1/2 cups powdered sugar
1 teaspoon vanilla extract

Preheat oven to 180°c. Line the bottom of a pan with cooking paper and set aside. In anither bowl, whisk together flour, baking powder and salt. Set aside. In another bowl beat together cream cheese, butter and sugar until light and fluffy, about 2 minutes. Add eggs one at a time, throughly mixing each time. Add vanilla extract and lime zest, mixing until combined. Pour flour mixture over the batter mixture. Using a spatula, now gently fold in the flour until it’s completely mixed in. Lastly, fold in the blueberries. Transfer batter to prepared baking loaf pan. Bake for 1 hour or until toothpick inserted in the center comes out clean. Let sit until cool, at least 30 minutes and then remove from pan. To make the cream. In a large bowl, beat butter and cream cheese until smooth. Add sugar and beat on low speed until combined, then on high until frosting is smooth. Beat in vanilla extract. Now frost on top of the cooled poundcake and store in fridge until ready to serve.

Season with salt, pepper and oregano leaves. Bring to the boil. Reduce heat to low. Simmer, uncovered, for 15 minutes or until sauce has thickened. Remove from heat. To make the bachemal 
Melt the butter in a saucepan. Stir in the flour and cook, stirring constantly, don't let it brown about 2 minutes. Add the milk, continuing to stir as the sauce thickens. Bring it to a boil. Add salt and pepper to taste, lower the heat, and cook, once thickens add cheese and stir until cheese is melted. Remove from the heat. Preheat oven to 200°. And in a baking dish. Spoon 1/2 cup mince mixture over base of dish. Arrange lasagna sheets over meat mixture, add lasagna sheets than mince mixture again repeat the same process until you finish your lasagna sheets. Once done add bachemal on top. Sprinkle with mozeralla cheese. Bake cheese is golden. Stand for 10 minutes before serving.

Philly cheesesteak sloppy Joe's

Ingredients

1 kilo mince beef
2 tablespoons butter
1 onion diced
1 green capsicum diced
mushrooms (optional)
2-3 tablespoons tomato sauce (ketchup)
1 1/2 tablespoon Worcestershire sauce
Salt
Black pepper
1 tablespoon corn flour
1 cup beef broth
1 1/2 cup Cheddar cheese
6 brioche hamburger buns

Instructions

In a skillet add the mince and cook until fully cooked and a deep brown crust starts to appear. Remove the beef and if you like to ust the same skillet remove the fat and add the butter and the onions and bell capsicum. Cook for 3-4 minutes till soft. While cooking the onions in a small cup mix the beef broth and cornflour together. Add the meat back into the pan and add the tomato sauce, Worcestershire sauce, salt, black pepper, beef broth/cornflour mixture into the pan. Cook until the mixture is only slightly liquidy, we dont want it too dry 5 minutes. Turn off the heat, add in the cheese. Mix well and once the cheese melted, serve it hot on toasted brioche buns. Enjoy

Strawberry and cream puff

Ingredients

Puff pastry sheets
3 tbsp sugar for the cream
600ml thickened cream
1 tsp vanilla extract
2 cups fresh or frozen strawberry or raspberry
½ cup sugar
squeeze of lemon
1 1/2 tsp corn flour dissolved in ¼ cup water
Icing sugar
1 egg + 1 tbsp water, (to make an egg wash)

Instructions

Take out the pastry from the freezer and let it thaw. Whisk the egg and water together to make an egg wash.
In a bowl add cream, 3 tbsp of sugar and vanilla beat all ingredients together with an electric mixer until light and fluffy. Set aside. Cut your puff pastry into squares and lay out the puff pastry on a baking sheet and lightly brush it with the egg wash. Lay the second sheet of puff pastry on top and brush with egg wash. Place your pastry in the oven until they are golden and crispy. Once done let it cool completely. In a pot add strawberry, 1/2 cup sugar and the corn flour mixture and squeeze of lemon. Stir cook until thick around 10 minutes. Cool completely to room temperature then in the fridge. To set up the pastry split the cooled pastries with a sharp knife. Spread the strawberry on the bottom pastry than add cream on top qdd another pastry on top and enjoy.

Prawn Singapore noodles

Ingredients

Prawns cleaned and washed
1 pack singapore noodles
1 tsp Curry Powder
1 teaspoon of turmeric
1 tsp garlic crushed
1 tsp ginger
1 onion, sliced
Mushrooms, sliced (optional)
1 green capsicum, sliced into strips
1 red capsicum, sliced into strips
Carrot, broccoli, cauliflower, beans
For the sauce
3/4 cup low sodium chicken broth
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon sesame oil
1 tablespoon brown sugar
1 teaspoon cornstarch

Instructions

In a bowl add prawns and toss with curry powder and tumeric. Set aside while you chop your veggies, make the sauce by whisking the sauce ingredients in a small bowl and set aside. Now cook your noodles according to the packet instructions. Drain, rinse in cold water; set aside. Toss with a drizzle of sesame oil if not using immediately.
Heat 1 teaspoon vegetable or peanut oil in a large nonstick skillet over medium-high heat add eggs and let cook until set, about 15 seconds, then remove to a plate. In the same skillet, heat 1 tablespoon oil over medium heat. Add the prawns and cook 3-4 minutes, just until prawns are cooked through, flipping half way through. Remove to a plate.
Heat 1 tablespoon oil in the now empty skillet over medium-high heat. Add the onions, and capsicums and cook for one minute. Add garlic and ginger and cook for another minute. Now add the rest if the vegetables and cook for 4-5 minutes. Add eggs add prawns and noodles, now add the sauce and toss to combine. Bring the sauce to a simmer and cook until thickened, while tossing noodles, about 2 minutes. Prinkle seasme seeds or green onions on top and enjoy.

Cream cheese danish

Ingredients

Puff Pastry, thawed
250 Cream Cheese, softened or room temperature
1 tsp Vanilla Extract
3 Tbsp Sugar
Fresh strawberry and blueberry
1 Egg whisked for egg wash

Instructions

Preheat oven to 200°c. Cut pastry into squares you will end up with 9 squares
With a knife, score ½” border around the edge of each piece of puff pastry. Use a fork to make five or six pricks into the dough within the border of each piece. This will help keep the middle of each piece from rising. In a bowl, stir together softened cream cheese, sugar, and vanilla. Spoon mixture into the middle of each piece of dough and spread around evenly, ensuring the mix stays within the borders. In the middle of the cream cheese, add about 4 berries or strawberrt into the middle. Brush the egg wash around the edges of the puff pastry. You can also make different shapes check out my highlights. Sprinkle sugar around the edges and bake for around 20 minutes, or until it's golden. Enjoy

One pan cheesy pasta

Ingredients

1 Tablespoon olive oil
1 onion finely chopped
2 cloves garlic (crushed or finely chopped)
1/2 kilo mince meat
1 can chopped tomatoes
¼ cup tomato paste
1 ½ cups beef stock
1 Tablespoon dried mixed herbs
1 Tablespoon worcestershire sauce
1 bag penne Pasta
Mozzarella cheese

Instructions

In a large pan heat the oil over a medium heat. Add the mince meat and cook until.it changes colour. Add onion and cook till its soft than add the garlic and cook for 2 minutes until fragrant. Add tomatoes, tomato paste, beef stock, mixed herbs and worcestershire sauce and stir to combine. Reduce heat to medium/low, add the pasta and stir to combine. Cover and allow to cook for 15 minutes, stirring once during cooking. After 15 minutes, remove the lid and check that the pasta is cooked. If it needs, cook for an extra couple of minutes.
Sprinkle the cheese on top and cover again for another 2 minutes until the cheese has melted. Take the pan off the heat and serve immediately. Enjoy 😉

Seafood in coriander garlic sauce
Ingredients

4-5 cloves garlic
Salt to taste
Black pepper to taste
2 bunches fresh coriander
1/2 cup olive oil
1/4 cup fresh lemon juice
Large fish
Prawns
Calamari
Octopus

Instructions

In a blender add all ingredients, then blend until desired consistency.
Pat dry your fish with paper towel on both sides. Place parchment paper in an oven tray and add the fish on top. Using your knife make a few slits. Add your sauce and rub both sides of the fish. Use the sauce on your seafood as well put everything in the oven tray and bake it on 250°c for 1 hour or until everything is cooked. (Depends on your oven). You can use some of the sauce to dip in your seafood. Enjoy

Lebanese Mansaf
Ingredients

1cinnamon stick
Dry lemon
2 bay leaves
Chicken breast fillets
1brown onion, finely chopped
1/2 kilo mince meat
(1½ -2 cups) basmati rice, washed and drained
Paprika
Salt
½ tsp black pepper
½ tsp Lebanese mixed spices (seven spices)
1/2 tsp Corianda seeds
1/2 tsp Ground cinnamon
1/2 tsp All spices
1 tbsp Mansaf spices
2 tbsp vegetable oil
1 tbsp Butter
½ cup flaked/slivered almonds
Lebanese salad, to serve

Instructions

Sprinkel the chicken with salt, pepper and paprika. In a pot add vegetable oil and sear the chicken on both sides till golden. Once done add cinnamon stick, dry lemon and bay leaves. Pour 4 to 5 cups of water on top of the chicken and let it boil for 15-20 mintues. Scrape any fat from the top. Drain, reserving the stock. When cool enough to handle, coarsely shred the chicken.
Add the butter and onion and cook for 5 minutes until the onion softens. Add the mince meat and cook, stirring regularly, for 10 minutes until the meat cooks and the water evaporates.
Add salt, black pepper, coriander, cinnamon, mansaf spices, lebanese mix spices and all spices. Stir and cook for 2 minutes than add the rice and mix it well with the meat. Add the reserved chicken stock and bring to the boil, stirring occasionally. Reduce the heat to low, cover and simmer for 10–12 minutes, until the rice is cooked.
To serve, place the rice mixture on a serving platter and cover with mince meat (optional) and with shredded chicken. Top with almonds and pomegranate seeds. Serve with salad

French toast

Ingredients

White bread, brioche bread preferably stale sliced into thick pieces
3 eggs
1/2 cup milk
1 tsp cinnamon powder
1 tbsp vanilla essence
3 tbsp butter
Maple syrup to serve

Instructions

Remove crust of bread, then cut each into thick slices. Combine the eggs, milk, cinnamon and vanilla in a bowl large enough to roll the bread in.
Melt 2 tbsp of the butter in a large pan over medium high heat.
Roll the bread in the egg mixture, shake off excess and place in pan. Turn to cook each side until golden. Serve with maple syrup. Enjoy

Lemon pound cake

Ingredients

1 1/2 cups plain flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup or 230g; unsalted butter, softened to room temperature
1 cup granulated sugar
3 large eggs, at room temperature
1/4 cup sour cream, at room temperature
3 Tablespoons squeezed lemon juice (about 1 lemon)
zest of 1 lemon
1 teaspoon pure vanilla extract
For the icing
1 cup powdered sugar, sifted
1 and 1/2 Tbsp lemon juice
1 Tbsp heavy cream or milk
Instructions
Preheat the oven to 180°C. Mix the flour, baking powder, and salt together in a large bowl. Set aside.
With a mixer beat the butter on high speed in a large bowl until smooth and creamy, about 1 minute. Add the sugar and beat on high speed for 2 minutes until creamed. Scrape down the sides and with the mixer running on low speed, add the eggs one at a time. Once the last egg is completely mixed in, stop the mixer. Add the sour cream, lemon juice, lemon zest, and vanilla extract, then beat on medium speed until combined. Scrape down the sides and with the mixer running on low speed, slowly add the dry ingredients just until combined. Avoid over-mixing. Batter is thick.
Spoon the batter into prepared pan and bake for 50-60 minutes. The cake is done when a toothpick inserted in the center comes out clean. Remove the cake from the oven and allow cake to cool in the pan for 1 hour, then carefully remove the slightly warm cake from the pan. Whisk all of the icing ingredients together and pour over cake. Enjoy

Cheat knafeh

Ingredients

2 cups full cream milk
4 tblsp cornflour
6 tblsp sugar
1 tblsp orange blossom
250 ml or one cup thickened cream
2 tblsp fine samolina
500g sweet cheese or unsalted Mozeralla cheese
Butter
1 pack cornflakes crumbs
Foil cups

Instructions

First make you atar and set it aside to cool. In your cups or tray put melted butter in the bottom than sprinkle cornflakes crumbs evenly on top. Repeat the same step with all the cups. In a medium nonstick pot pour in milk and heavy cream, add corn starch, samolina and sugar and stir until sugar and starch disolve and all well combined.
Heat the mixture up on a medium temperature until boil while keep stirring so the liquid would not stick to the pan. When the mixture come to boil and start thicken enough like a pudding turn heat off add the blossom water and cheese and mix well until all the cheese melts. Spoon mixture on top of each cup and sprinkle cornflakes crumbs on top, add unsalted butter and cook for 25 mins or until it starts to bubble around the edge. Remove from oven and let it cool. If you using qvtray do the same steps. Garnish with pistachio and pour atar on top.

Creamy beef pasta

Ingredents

500g pasta
2 tablespoons oil
Half kilo mince meat
1 onion (diced)
1 tbsp garlic (minced)
1 teaspoon Italian seasoning
1 teaspoon dried parsley
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika
2 tablespoons all-purpose flour
1 cup beef stock
1 cup passata sauce
3/4 cup heavy cream
1/4 cup sour cream
Salt and freshly ground black pepper (to taste)
1 1/2 cups cheddar cheese

Instructions

In a large pot cook pasta according to package instructions and drain well. Heat oil in a large skillet over medium high heat. Add mince meat and cook until fully cooked. set aside. In the same skillet, add 1 tbsp of oil and cook onion, cook until soften, stirring frequently. Add garlic, and cook for 1 minute. Whisk in flour until lightly browned, for about 1 minute. Add beef stock and stir to combine. Add passata sauce and add Italian seasoning, dried parsley, oregano, and paprika. Mix than add salt and pepper. Bring to a boil, reduce heat and add heavy cream and sour cream. Taste and adjust for salt and pepper. Add back meat and let it simmer, stirring occasionally for around 5 minutes or until the sauce thickens. Stir in cooked pasta, than add cheddar cheese and mix until melted, about 1-2 minutes. Serve immediately, garnish with parsley if desired. Enjoy

Spinach and cheese pocket puffs

Ingredients

Puff pastry thawed
1 onion small
Frozen spinach thawed and squeezed
1 tablespoon oil
Feta cheese
Mozeralla cheese
Salt
Pepper
One egg whisked

Instructions

Remove your spinach from freezer and let it thaw. Squeeze well so that they are no juice or liquid remined in it. Preheat the oven to 200°C degrees. Chop onion finely. Fry them in oil in a pan, add spinach and stew for about 5 minutes. Let it cool down a little bit. Cut the feta into small cubes. Add to the spinach, add mozeralla cheese, taste and if you like season with salt and pepper. Cut the puff pastry into about 4 squares you can cut it into 8 squares if you like to make it smaller size.
Put about 1 tablespoon of spinach-cheese mixture in each square, fold the dough over, and form a triangle. Press the edges firmly together with your finer than with a fork. Whisk the egg and brush the pastry squares with a brush. Sprinkle seasme seeds if you desire. Bake until they are golden. Enjoy
