Bastille day is coming up on July 14th, and what better way to mark the occasion than with some French countryside cooking 😋 Chicken à la Provençale is a favourite in our recipe repertoire, because despite being a 'dump and bake' kind of dish, it carries with it all the charm and sophistication of French cuisine by expertly slow-roasting the chicken pieces with deeply flavourful aromatics like Herbes de Provence, shallots, green olives, garlic, tomatoes, lemon and vermouth. Delectable and always a crowd pleaser!

Ingredients:
Approximately 1kg chicken drumsticks, skin on (~8 drumsticks)
3 tsp Gewürzhaus Pyramid Flake Salt
2 tsp black pepper, freshly ground
3 tbsp Gewürzhaus Herbes de Provence
½ cup plain flour, for dusting
4 tbsp olive oil
1 lemon, cut into wedges
8 cloves garlic, peeled
6-8 medium French shallots, peeled and quartered
150g whole green olives, pits removed
250g whole cherry tomatoes
¾ cup dry vermouth
Fresh thyme or tarragon, to serve

Directions:
1. Preheat your oven to 200ºC (fan-forced).
2. Pat chicken pieces dry with a paper towel, then season with pepper and sea salt. Combine Herbes de Provence with flour in a shallow dish, then dredge the chicken in the mix. Dust off excess flour and set aside.
3. Grease a deep roasting pan with olive oil.
4. Arrange chicken skin-side up in the roasting pan, surrounded by lemon wedges, garlic and shallots.
5. Scatter the olives and tomatoes over the chicken, then drizzle vermouth into the pan.
6. Roast for 25 minutes, then baste the chicken with pan juices.
7. Return to the oven, reducing the temperature to 180ºC. Continue roasting for a further 25 minutes, until the chicken is crispy and cooked through.
8. Serve in the pan; garnish with fresh herbs.

Have you tried Marmorkuchen before? This traditional German chocolate marble cake not only looks spectacular, it tastes spectacular too! Using our classic Chocolate Spice, it's the perfect cake for your next celebration or teatime treat 😋

Ingredients
300g unsalted butter, softened
250g white sugar
5 free-range eggs
300g plain flour
15g baking powder
200g plain yoghurt
2 tbsp Gewürzhaus Chocolate Spice
80g dark chocolate, 60-70% cocoa

For the glaze
150g dark chocolate, 60-70% cocoa
80g thickened cream

Directions
1. Preheat the oven to 160°C. Grease a 23cm bundt cake pan with butter, then lightly flour.
2. Using an electric mixer on a medium to high setting, cream the butter and sugar until pale and fluffy. Add the eggs one by one, beating in between to fully incorporate.
3. In a separate bowl, sift flour and baking powder together. Add 1/3 of the flour mixture to the creamed butter and beat until fully incorporated. Then add 1/3 of the yoghurt to the mixture and beat in. Repeat until both the flour mixture and yoghurt are incorporated into the batter.
4. Transfer half the batter to a separate bowl and set aside.
5. Melt the dark chocolate in the microwave in 30-second intervals, stirring in between. Allow the chocolate to cool slightly to room temperature. Stir the melted chocolate and Chocolate Spice gently through one half of the batter.
6. Spoon the chocolate and plain batter into the bundt pan alternately.Then, using a fork, mix the two doughs together in a circular motion to slightly combine, giving the marbled effect.
7. Bake for approximately 40 minutes, or until a skewer inserted in the centre comes out clean.
8. Allow the cake to cool for a few moments before turning it out onto a wire rack. Let the cake cool completely before drizzling the glaze over.
9. To make the glaze, warm chocolate and cream over the stove on low heat, whisking continuously, until melted and glossy.
10. Pour the hot glaze over cooled cake.

If you haven’t tried it yet, now’s the time - this blend is only here for a short while ⏰ Dried porcini mushrooms add depth of flavour to hand-harvested sea salt, creating a unique blend that’s heavy on the umami. Perfect on scrambled eggs, steak, roast vegetables and creamy pasta dishes like this Ravioli with Mushroom Cream Sauce. Yum!

Ingredients:
600g spinach and ricotta ravioli
1/3 cup cooking water
2 tbsp olive oil
1 tbsp butter
1 tbsp fresh thyme
1 clove of garlic, finely minced
1 medium shallot, halved and sliced lengthwise
500g white button mushrooms, thinly sliced
3 tsp Porcini Mushroom Salt, divided
300ml thickened cream, at room temperature
Grated Parmesan, to serve.

Method:
1. Bring a large pot of water to the boil.
2. Heat up the oil and the butter in a large frypan over medium heat. Add the thyme and shallot and fry for 2-3 minutes, careful not to burn them. Mix in the mushrooms, season with 2 tsp of Porcini Mushroom Salt and saute until softened and slightly browned on the edges, this will take about 5-7 minutes.
3. In the meantime, add the ravioli to the pot of boiling water and cook for one minute less than what’s recommended by the cooking instructions. Reserve 1/3 cup of cooking water before draining them.
4. Add the cooking water to the sauteed mushrooms, then slowly pour in the thickened cream and mix to incorporate. Let the cream cook over medium-high heat for 2-3 minutes, until it has slightly thickened and is no longer runny. Gently fold in the ravioli and mix well to coat. Sprinkle with one more teaspoon of Porcini Mushroom Salt.
5. Serve with a generous heaping of grated Parmesan.

Ingredients:⁠
1/3 cup Gewürzhaus Vanilla Bean Sugar⁠
1/3 cup sprinkles⁠
2 1/2 cups almond meal⁠
1 cup white sugar⁠
2 tbs Gewürzhaus Double Dutch Cocoa Powder⁠
3 egg whites⁠
1 tsp vanilla extract⁠
150g milk chocolate melts (optional)⁠

Directions:⁠
1. Preheat the oven to 160˚C fan forced and line a large baking tray with a silicon baking mat.⁠
2. In a small bowl, add the Vanilla Bean Sugar and sprinkles. Set aside.⁠
3. In a large mixing bowl, combine almond meal, white sugar, and Double Dutch Cocoa Powder. Next, add the egg whites and the vanilla extract. Stir with a wooden spoon until the mixture is evenly combined and forms a soft, slightly sticky dough.⁠
4. Scoop out a walnut-sized amount of cookie dough and roll it into a smooth ball using the palms of your hands. Roll the ball in the Vanilla Bean Sugar and sprinkles prepared earlier and place it on the lined baking tray. Repeat the process with the remaining dough.⁠
5. With the help of a teaspoon, gently press down on each cookie ball to slightly flatten it.⁠
6. Bake the cookies for 10 minutes, then transfer them to a wire rack to cool for 10 minutes.⁠
7. For extra chocolatey goodness, melt 150g of milk chocolate buttons over a double boiler (or in a microwave). Add a teaspoon of melted chocolate in the centre of each baked cookie and let it cool.

Our fragrant Garam Masala is back in stock! With hints of ground cinnamon, clove and black peppercorn, this robust spice blend is an absolute essential in any spice cabinet. Try it in our Creamy Coconut Curry 😋

Ingredients:
2 tbsp coconut oil
1 brown onion, diced
2 tbsp Gewürzhaus Garam Masala
2 chicken thighs, largely diced
1 cup whole green lentils, rinsed
4 potatoes, diced to 2cm pieces
2 tsp high quality fine salt
1 tbsp tomato paste
400ml tinned coconut milk
1/4 cauliflower, chopped
3 big handfuls of leafy greens, chopped
Handful of green beans, de-stringed

Method:
1. Heat the oil in a large pot on low to medium heat. Add the onion and cook for 5 minutes or until it starts browning.
2. Add the garam masala, chicken and lentils and stir, then cook for 3 minutes or until the spices are fragrant and the chicken is just sealed.
3. Add the potatoes, salt, tomato paste, coconut milk and a coconut-milk-tin full of water. Increase the heat to bring to a simmer, then reduce the heat to low. Cook covered for 30 minutes or until the lentils and potatoes are cooked. 4. Add cauliflower, greens and beans. Stir in well and cook covered a further 5-10 minutes or until the beans are cooked. Serve immediately.

Cosy autumn days call for comfort baking. Warm yourself by the oven and celebrate the abundance of in-season apples by making our Baked Apples with Rum. Apples are halved and infused with rum, salted butter and woody spices like ground cassia, nutmeg and clove. Slowly baked until soft and caramelised, then finished with a drizzle of cream. Now that's comforting! 🥰

Ingredients:
2 heaped tbsp salted butter
2 heaped tbsp thick cream, plus extra for serving
2 heaped tbsp of coconut sugar
2 tsp Gewürzhaus Apple Cake Spice
1 tbsp rum
8 ideally-overripe apples, washed and halved through the stem
1 sprig fresh thyme

Directions
1. Preheat oven to 200°C conventional.
2. Melt the butter. Add cream, sugar, spice and rum and mix well to combine.
3. Place the apples in a large baking tray, cut side down, and brush them with the butter mixture. Turn the apples over and brush the other side. Reserve the remaining mixture to serve. Pour some water into the baking dish so that the base is covered just enough to avoid the apples burning.
4. Bake for 30-50 minutes depending on how ripe your apples are (allow for a longer time if they are crunchy), carefully basting with juices at the bottom of the pan every 10 minutes. The apples are ready when they are starting to fall apart and collapse into themselves.
5. Let the apples cool slightly, then serve with the remaining butter mixture, extra thick cream and a sprinkle of fresh thyme.
