Made with sheep and cow’s milk with the addition of a generous amount of black and pink peppercorns.
This creates a sharp, peppery bite and a long, lingering finish with hints of cream and cultured butter. It is aged for at least 6 months on locally sourced wooden boards in the cellars at Valcasotto, Piedmont. Under the natural crusty rind the texture is moist, crumbly.

🧀Our Father’s Day Selection 🧀 is an exclusive range of cheeses from producer Beppino Occelli - we consider them to be in the category of “The Best of The Best” cheese!
Our Father’s Day Selection Includes:
🍷 Occelli al Barolo – Coated with the pressed grapes used to make Barolo wine – the flavours of the cheese and grapes mingle together to create a flavour that is bitey, creamy, sweet, winey, buttery and sharp all at once.
🥃 Occelli Cusie Malt & Whisky – A mature cheese soaked in whisky and coated with malted barley. It has a deliciously intense flavour, with hints of smokiness, nutty ‘cereal’ flavours, cream, salted caramel and spicy whisky.
🍇 Occelli Grappa di Moscato e Frutta – A mature cheese soaked in grappa with dry fruits pressed on top. It is crumbly and sweet with a finish of grappa on the back palate.
🍁 Occelli Cusie al Castango – A mature cheese wrapped with chestnut leaves with an amazingly complex flavour that is strong but not necessarily ‘bitey’ – there is a long-lasting flavour.

A successful collaboration between Cabot Creamery who have been producing cheddars since the 1930’s & Jasper Hill Farm who mature this special batch of cheese in their calibrated vault.

Welcome to Formaggi Ocello where we stock the finest and largest selection of Italian, French and Swiss Cheeses.
We also stock the finest Spanish, Swiss, Dutch, English, Irish, Scottish, American and of course Australian farmhouse cheeses.
Formaggi Ocello was established in 2001, retailing to cheese enthusiasts across Sydney via the Growers Markets at Pyrmont, North Sydney and Fox Studios.
From humble beginnings all those years ago (19 years ago) with a hand-ladled goats cheese from Queensland, we now have over 200 local and international cheeses on offer at our store in Surry Hills.
Determined to source only the finest products, each year we travel extensively throughout Europe to discover new cheeses for the Australian market. Our speciality is rare cheeses and we take great pride in selecting cheeses that have been made in certain seasons at altitudes where animals roam freely and milk quality is at its best. To maintain its condition, we air freight fresh cheese and then transfer it to our purpose-built maturation room which is visible to customers in the store. Storage in the maturation room allows the cheeses to age to perfection in specific temperature and humidity conditions.
