Fred’s Head Pastry Chef, Carley, has an affinity for baking. Originally from London, she spent her childhood baking comforting dishes with her grandmother, whose ethos of wholesome, simple recipes threads through Carley's cooking to this day.

"I make food that I personally like to eat. This usually ends up being something extremely nostalgic for myself and the people that eat it. I don't like to take it too seriously", she says.
