CURATING BISTECCA’S AWARD WINNING WINE LIST w/ SHEILA.

How would you describe Italian wine?
Italian wine is one of the most complicated wine countries. It is complex, diverse and home to thousands of grape varieties. On a lighter note; there is also something here for everyone. Whether you’re drinking white burgundy, or Australian shiraz, Italy’s incredible scope has you covered.

What are the important characteristics of an award winning wine list and what make’s Bistecca’s wine list unique?

I believe an award winning wine list comes down to vision. The story your wine list is telling and why... For bistecca we want to showcase all the glory of Italy. The terroir, the grapes, and the people behind the wines. Not only do I have important classic names on the list, I also love to support the rare, the unknown and the odd! Further, a wine list should be accessible. We offer a great range in price spanning all the way from $75 to $2,000 a bottle.

What’s your favourite Italian grape varietal and why?

Putting my beloved Nebbiolo aside... I’d have to say Timorasso from Piemonte. Timorasso is a stunning underdog that came very close to extinction in the 80s. With texture, bracing acidity, notes of honeyed lemon, minerality and nuts it could easily be mistaken for some of the worlds finest chenin blanc.
If there was one bottle you could choose on the wine list right now to enjoy with your Bistecca Alla Fiorentina what would it be and why?

It would have to be Barolo for me. The 2017 Anna Maria Abbona ‘Bricco San Pietro’ is absolutely stunning. Coming from a challenging year you can see how talented the winemaker Anna Maria truly is. Elegant, with floral aromatics and spice, it is dangerously delicious next to the bistecca.

What makes Bistecca’s wine list appeal to an audience of people with sufficient wine knowledge and those who are beginners ?

I love the bistecca wine list because it can reach just about anyone. Wine collectors and connoisseurs drool over my array of vintages and single vineyard wines. While those just looking for a nice drop can cozy up with something cheerful and exciting

Two new venues will join the family within one of Sydney's most anticipated boutique hotel openings of the year, The EVE Hotel.

WHAT MAKES US BISTECCA.

Our beef is sourced from Riverine, a region spanning across southern New South Wales from the foothills of the Snowy Mountains to the flat, dry plains of the inland. At Bistecca, the meat is cut and weighed, then presented to diners before being cooked fireside over ironbark and charcoal to a perfect medium-rare. The steak is left to rest and served in traditional Italian fashion, well-seasoned with salt, pepper and a drizzle of olive oil.
