Beautiful lunch served in house by the extremely talented Carly Delahunt! I met Carly 5 years ago in Uzes and the love she puts into her dishes is clearly visible!

1. Melon wrapped in prosciutto
2. Pan roasted onions with Parma ham and shaved pecorino
3. Burnt orange, burrata and pomegranate salad
4. Roast Organic chicken with saffron roast potatoes
5. Spiced halloumi salad with tomatoes and cucumber
6. Non baked cheesecake

The famous farmers market 😍😍 Held every Wednesday and Saturday rain hail or shine!! Such a great example of passionate producers coming together in the beautiful town square of Uzes. Incredible olives, tapenades, vegetables, spices, legumes, seafood, aperitifs, bread, wine and cheese. Unfortunatly the meat offering wasn’t great, although the veal and chicken on offer more than made up for this. Great spot to people watch, pick up lunch and then head back to the pool πŸ₯΅πŸ₯΅πŸ‡«πŸ‡·πŸ‡«πŸ‡·πŸ‡«πŸ‡·πŸ₯°πŸ₯°πŸ₯°πŸ™πŸ™πŸ™πŸ™

What an incredible couple of days checking out the operations of which we source the beef from. Mantuan Downs is a large-scale cattle breeding and finishing property in Central Queensland. The 134,000 hectare property and associated feedlot in Dalby is central to the program which delivers consistently sized graded meat to us. Thanks to .jeffreys and .carson.5099 for the opportunity to meet the people that are crucial to making this fantastic operation run πŸ’ͺπŸ’ͺ πŸ‘¨β€πŸŒΎ πŸ₯© πŸ‘πŸ’₯πŸ’₯πŸ’₯πŸ’₯πŸ’₯ ✈️

An amazing weekend spent with my main man camping at The Glengarry Campus. It was such an amazing experience to share with my son and one for which I am so thankful for. To say I’m proud of my son would be a massive understatement. His achievements continue to defy my expectations as his Dad!! πŸ’™πŸ’™ We laughed, we reminisced, we learnt and we walked!! We were happy to bring home the goods in the Dorm D β€œTough Mudder” too πŸ†πŸ†πŸ₯³πŸŽ‰ I look forward to seeing him again in 6 weeks time, at the culmination of his rite of passage - The Long Journey Home which involves a 270km hike, bike ride and ferry trip back to The Scots main campus in Sydney in front of the whole school 😳😳πŸ’ͺπŸ’ͺπŸ’ͺ πŸ’™
