THE ART OF BALANCE: OUR NEW WINTER COCKTAIL MENU “The key underlying theme I’ve chosen for our winter drinks menu is balance. Balance in flavours, textures, styles, and lastly (and most crucially) a balance in ideas from my team. Usually myself, Lenny, and the core management team produce our cocktail menu. This time we opened it up to the wider team and gave all of the crew the chance to have their mark on the menu. This is truly the most collaborative menu we’ve ever done, and the differences in styles, people’s palates, and flavours bring us back to our core theme, balance.” — @matty_opai
