🐃🐃Buffalo (Bison) Carbonnade🐃🐃

Carbonnade is the Belgian version of French boeuf bourguignon, only the meat is braised in dark ale instead of red wine. Chimay—a Belgian ale made by Trappist monks—is traditional in this dish. But you can experiment with other types of ale or even stout. (A commenter below asks about using Guinness, which is ideal, and I've even used chocolate stout with nice results.) Our interpretation uses bison (buffalo) stew meat, which you can find online and in many health-food stores. Ounce for ounce, it has about 20% fewer calories and half the fat of beef. Grass-fed beef stew meat also works well here. Serve over egg noodles or our Celery Root, Potato and Apple Mash.

Ingredients:
2-3 tablespoons canola oil, divided
1-1/2 pounds bison (buffalo) stew meat, cut into 1-1/2 cubes
sea salt and freshly ground black pepper, to taste
1/2 cup all-purpose flour
1 medium onion, thinly vertically sliced
2 cups dark ale (such as Chimay Bleu)*
1 cup beef stock
1-1/2 teaspoons brown sugar
2 sprigs thyme
1 bay leaf
flat-leaf parsley, chopped (for garnish)

Instructions:
Preheat oven to 300°F.
Heat a Dutch oven over medium-high heat, and swirl in 1 tablespoon oil. Pat meat dry with a paper towel, and sprinkle with salt and pepper. Place flour in a shallow bowl, and dredge meat in flour, shaking off excess. Add meat to pan, and cook 4-5 minutes, turning to brown on all sides. (Brown the meat in batches, using extra oil as needed, so you don’t overcrowd the pan.) Remove meat from pan.
Swirl another tablespoon of oil into the pan. Add onion, and saute 5 minutes, or until tender. Add ale to pan, and scrape the bottom of the pan to loosen any browned bits. Cook 2 minutes, or until until ale is reduced by half. Return beef to pan. Add stock. Stir in sugar. Add thyme sprigs and bay leaf. Bring to a boil. Cover and place in the oven for 2 hours and 15 minutes, or until meat is fork-tender. Discard thyme sprigs and bay leaf. Adjust seasoning. Garnish with chopped parsley.

* MUST HAVE Q FEVER VACCINE BEFORE COMMENCING
* Have availability for full-time employment, Monday to Friday
* Have access to reliable transport
* Able to work in Cold storage approx 12degrees and may be short amounts of time in blast freezer -30 degrees
* Be reliable, committed, punctual, willing to learn and have a positive attitude
* Be comfortable working in a production & boning room
* Be comfortable handling raw meat and animal bi-products
* Be able to adapt to a fast-paced physical role with a focus on safety and quality

Job includes:
Labourers:
- Heavy lifting approx 25kg
- Packing Product, boxing , strapping & labelling product
- Stacking Products on pallets
- Possible bandsaw use
- Unloading carcasses from truck
- Cleaning & Sanitising equipment
- Follow work health & safety regulations
- Machine operating

Knife hands:
- Knife skills preferred but training can be provided to right applicants
- Trimming
- Cutting
- Portion cuts
- Slicing
- Have a willingness to learn the basics and possibly preform duties such as, packing, labelling, machine operating, manual handling and cleaning.

HEAPS IN STOCK DICED BUFFALO MEAT

——- 🐃 Beef Buffalo Stew 🐃-——

INGREDIENTS:
¼ cup canola oil or olive oil
¼ cup butter
2 lb(s) buffalo stew meat, cubed
1 splash red wine
2 onions, chunky slices
2 clove garlic, diced
4 cups beef broth
1 Tbsp Worcestershire sauce
2 Tbsp steak spice
Few sprigs fresh thyme and rosemary
1 bay leaf
4 medium carrots, peeled and sliced
4 medium potatoes, peeled and diced chunky
4 stalks celery, diced
2 cup corn
2 cup peas
Salt and pepper to taste

DIRECTIONS

Notes
To thicken stew, shake 1 part flour to 1 part cold water in a covered shaker. Add slowly to the buffalo stew until desired thickness is reached.

Step 1
Using a large pan, heat oil and butter.

Step 2
Add the buffalo meat and brown the meat on all sides.

Step 3
Add red wine, onions and garlic and cook until translucent.

Step 4
Add beef broth, Worcestershire sauce, steak spice, thyme, rosemary, bay leaf and bring to a boil.

Step 5
Add carrots, potatoes, celery, corn and peas.

Step 6
Continue to simmer until vegetables are tender, approximately 2 hours.

Step 7
Remove bay leaf.

Step 8
Serve with fresh hot baked bannock or buns of your choice!

~~~~ Simple Pan-fried Crocodile Meat ~~~~

3-4 Servings ~ 20 minutes

* 500g crocodile meat
* Lemon juice from one medium lemon
* 2 cloves garlic, minced
* 1 tsp salt
* 1/4 tsp ground black pepper
* Oil for shallow frying

This is a very simple recipe for crocodile meat. There’s nothing much to it and will not even take you a lot of time both in the preps and cooking. We’ll get straight into it.

Quick Instructions
1. Cut the meat (500g) into bite-size pieces. Season it with salt (1 tsp), black pepper (1/4 tsp), garlic (2 cloves, minced) and freshly squeezed lemon juice (1 medium lemon). Refrigerate this for about 1 hour.
2. After 1 hour, take your meat out of the fridge, heat oil in pan, shallow and slow fry your meat, turning it as you go until it turns a golden brown colour. And you’re done. You can drizzle a sauce of choice onto the meat or just eat it dry with a salad or vegetables of your choice.

Chilli-loaded baked potatoes

Fill with you choice of Kangaroo, Venison or Goat Mince!

This spicy chilli is the perfect remedy for cold winter nights. Load up your chilli-topped baked potatoes with cheese, a spoonful of sour cream and a sprinkling of freshly chopped chives.
⛈️
•Ingredients•
(serves 4)
- 450g mince
- 1 large onion, finely chopped
- 1 garlic clove
- 1 crushed beef stock pot/cube
- 400g can of chopped tomatoes
- 1 can of red kidney beans in water
- 1 tbsp. tomato puree
- 1½ tsp cumin1 tsp chilli powder (more/less to taste)
- ½ tsp chilli flakes
- Small pot of sour cream
- 50g cheddar cheese, grated
- 4 baked potatoes
- Rapeseed oil
- Sea salt
-Chives to serve

•Method•
1. Preheat the oven to 180⁰c fan.
2. Prick the baked potatoes all over with a fork and bake in the oven for 60 minutes, or until crispy on the outside and fluffy in the middle.
3. Whilst the potatoes are cooking, heat some oil and fry the onion on a low flame for about 5 minutes, or until softened. Add the garlic and cook for a further minute.
4. Add the mince and give it a good stir to break it up. Once browned add the spices and fry for 2 minutes before adding your chopped tomatoes, tomato puree, kidney beans a mug of water and stock.
5. Stir everything together, season then bring the chilli to the boil. Reduce the heat and simmer for about 45 minutes to an hour, stirring occasionally. If it starts to look a bit dry you can always add some more water.
6. Once the chilli is cooked and the potatoes are out of the oven it’s time to start loading them up!
7. Our favourite combination is baked potato, chilli, lots of cheddar cheese, a dollop of sour cream and a sprinkle of chives. Enjoy!

Healthy winter stew to satisfy your taste buds!

•Ingredients•
1 large kangaroo tail, jointed
Salt and pepper, to season
1 brown onion
2 potatoes
1 turnip
1 swede
1 sweet potato
2 carrots
2 ribs celery
2 zucchini
¼ green cabbage
Johnny cakes or crusty bread, to serve

•Instructions•
Place the kangaroo tail in a large pot and pour over enough cold water to cover well. Season the water with salt and pepper, bring to the boil over high heat, then reduce the heat to low and simmer for 3 - 4 hours or until the meat is starting to fall off bone.
Meanwhile, cut all the vegetables except the cabbage into a 2 -3 cm, then slice the cabbage. When the meat is tender, add all the vegetables except the zucchini and cabbage and cook for another hour or until the vegetables are nearly tender.
Add the zucchini and cabbage and cook for another 30 minutes or until tender. Serve hot with Johnny cakes or crusty bread.
