Back to basics: UMINONO AT HOME

Hey everyone!! I hope you are doing well!
Just touching base to say that we are still alive 😂

Demolition at the shop is done and the new structure is coming into shape 😊

The boys are enjoying some good time off, I have been napping and surfing a lot… aaaaaannnd I am bored now!

3 weeks away from fish and knives was too long!
Yesterday was our first omakase at home in a very long time!!

I have been missing that, this is how Uminono started in 2018 and pretty proud to see where WE are now!

Anyway, until the shop is ready, to keep us busy and to add a bit of “beurre dans les épinards” I am back with private Omakase at home 😃

How does that work?
About 16 courses, your home, your friends, your drinks and us.

And that’s it! Yesterday was our last day until reopening our brand new sushi bar in April!

Thank you to everyone who ordered this week, very grateful for your support, we have been sold out pretty much every day!

Those coming weeks are going to be intense but we are ready for a good break after that 🏄‍♂️😴

If you are wondering “humm… should I get a chirashi this week?”
I can tell you “Yep, absolutely!” and that’s the best $45 you will spend this week 😊

If you scroll to the 2nd pic, you will see one of our very fashion tote bags. Premium printing on one side and embroidered on the other side.

I may have ordered too many merchandising 😅

Dry aged yellowfin tuna.
One of the best yellowfin we had… maybe ever?

But also the first tuna we received in weeks.
Some of you might have noticed that we didn’t serve any tuna lately.

The reason is very simple: either no tuna available at all or only poor quality available. And as you know us, serving a low quality tuna isn’t even an option 🙃

Some days it’s a bit frustrating but then it push us to use other quality ingredient and be more creative 😊

Actually it reminds us how lucky we are when we have some of the best seasonal fish on the chopping board and that we should appreciate the efforts from our supplier to source the best for us 😉

🌈 So what’s going on at Uminono??

Well we are pretty much 1 month away from starting our renovations.

This isn’t sure yet if we will be open for Valentine’s Day, we might start the demolition few days before 👷‍♂️

We will be closed during the whole time of renovations.

IF we open on the 14th February, there will be a special box available 💌

What is sure (well from my plan at least…) is that we will be opening for dining in April!!

We will be serving our Omakase Express for lunch, 12 seats only (at the counter).

Good wines and sake, good food, good people… what else do you need? 😃

I will be looking for 8 people to test / taste our omakase before our official opening… stay tuned 🤫

And also, we are now on the hunt for a sushi chef to join the team, so pass the word around if you know someone 😊

Merry Christmas, Happy Hanukkah and Happy holidays to all of you!!

Whatever you celebrate, I wish you all a great time with your loved ones and warm thoughts for those that can’t be with you today.

Very grateful for a successful yet challenging year (business and personal).

I am specially happy that my team (me included haha) can enjoy Christmas Day out of work and be with family & friends.
It’s a beautiful day to sit back, relax, appreciate what we have done so far and enjoy life☀️

Today we received our new plates from

They are hand made in Japan and most importantly they look awesome 😎

This one is specific for nigiri, which you will enjoy at lunch for our Omakase Express.

I love the pebble look.
It actually remind me a lot of my hometown where the beach is covered by those large pebbles, nicely rounded & polished by the sea.
You hate walking on them but still love looking at them haha!

On the plate?
Spanner crab nigiri with ses
ame, dashi, lime zest, roasted spring onion oil & ikura.
It’s my new favorite nigiri 🤫

We are now entering the (very) busy part of Christmas season.

This Friday we are exceptionally closed for a private Christmas function off site. So please make sure to order for the rest of the week to avoid missing out 😉

24th December is already fully booked for takeaway boxes but there is still some availability around those dates.

This is not a picture for a “Uminono Calendar” 😂

Yesterday I put the name on the door and finally today we managed to fixe the lightbox.
Who would have thought that sticking a logo could be so stressful?!😅

You can’t miss us now!

So happy and proud to see my logo, my brand outside my own shop.
I started Uminono 4 years ago, and I would have never expected to have my own shop, a team of 3 amazing chefs working with me and so many people supporting us (talking about you guys)!

If you haven’t heard, we are still doing takeaway only at the moment.
We are renovating our shop in February and should be ready to welcome you in April for a proper dining experience.

In the meantime, Christmas is in 25 days!
Our special Christmas box for 2022 is now available online (pickup starting Friday 2nd).
There is also a whole CHRISTMAS SECTION on the website 🎄🎅

And if you have been courageous enough to keep reading until here, you will know that our online pre-order for whole December is opening just now.

Would you like to eat your sushi box on site?

As you know, we now have quite a big space and it’s a bit sad without people around 😅

So we thought about giving you the opportunity to pickup your box and stay with us to eat here.

There is just 14 seats, no booking possible. So first in first serve basically 😊

No change in our pre-ordering system but we would also do walk-in chirashi.

Plus we are not far to receive our liquor licence champagne 🤞🥂 🍣

Let me know what you think, that’s our workplace but this is “your” restaurant after all, you are the one to enjoy the place 😊

See you at the new shop from tomorrow!! That’s quite a big moment for me 😊

The new kitchen is HUGE so bring it on with the orders 🤙🤙

Just to remind you, we are still TAKEAWAY ONLY :)

Our new shop is nice and spacious but just not as I want to received my dear guests (you 😉).

We will be doing some renovations in February AND THEN you will be able to sit at a proper sushi counter.

Slowly but surely we are getting bigger and stronger. And this is all happening thanks to you guys 🙏

There is no investors behind Uminono, it’s just us working hard and reinvesting every cents into the business to offer you something very special 🙌

I can’t wait to see the final renovations, I think you will love it 💛 and I truely believe it will be something different in Melbourne.

24 CHATHAM ST, PRAHRAN VIC

Yep, that’s the address of our NEW SHOP and we are MOVING there from TUESDAY😉

But hold on! The new shopfitting is not done yet so don’t get too excited 😅

Let me explain what’s going on:

Sooo… I was expecting to have our new restaurant ready by November the latest. It turns out that it couldn’t be ready before February at best. (Major delays all over building industry)

The coming months are extremely important for the business and I couldn’t take the risk to be shut down for too long.

SO! I have decided to report the construction to late February and have everything ready for April🤞

In the meantime we will be focusing on serving you the best sushi boxes for takeaway!

This isn’t happening as I expected, but we (the team) have to adapt, deal with the situation and take the best out of it.

This is the beginning of a new exciting adventure and big challenges!

Oh and on another note, a new sushi chef will be joining the team very soon 🤙

To finish our two last weeks before flying to holidays, we will have a special box available from Tuesday until our last day Thursday 18th August. (Yes we changed the date😅)

It will be name the FAREWELL BOX (it makes sense I guess 🙃)

There will be no limited quantity on this one and we keep it at a fair price so that many of you can enjoy :)

Alrighty guys, this week marks our last lunch service at our Greville St address.

But before going on holidays, we are still doing our take away boxes and trust me that we are going to push the limit until Friday 19th August 7.01pm 💪 (I have a new shop to pay now 😂)

So from next week we will be able to increase (a bit) our daily production.

What’s going on at Uminono??
Time for some update 😉

As you know, we have a new venue (really close from our current address). Big big thank you for all your encouragement messages, I haven’t been able to reply to all (sorry!!) but trust me that I have read each one of them 🙏

While I am planning to open the new venue early October, we are also flying to Europe on the 21st August for holidays (OOH WEE!!).

So 19th August will be our LAST DAY OF TRADING . After that we will completely stop operating from St Edmonds Cafe.

Uminono will RESTART early OCTOBER.

Talking about St Edmonds Cafe (you know the people with who we share the space), they are back in business at the end of the month. Sadly we will stop our chirashi lunch and focus on takeaway only due to space matter.

Those are very exciting (stressful) times!
The sushi bar’s design is on progress & the search for a new sushi chef seems to be successful 🤙

I will share some pictures of new venue when possible.

In the meantime I am trying to maintain our Instagram attractive, but seriously this is a full-time job and hours are missing in my day 😅

Don’t hesitate to tell me what you would like to see more often or not on this page, I will do my best 🫡

Long time since I showed my face so here I am!

Another week of getting smashed at work and we like it 💪 so thanks for all the orders!

🤫 Some very exciting news coming up the last days but nothing I can really tell you for now… be patient you will love it!

Truffle season is starting but we will wait 2 more weeks until it reaches the best flavours.

You didn’t ask but yes I said goodbye to the long hair this week 💇

Another thing you didn’t ask and that I am not being sponsored for (but I wouldn’t mind 🙋):
is doing an amazing non-alcoholic XPA beer. We have it on the menu and I totally recommend it to go with your chirashi at lunch!

More bluefin arriving in our kitchen tomorrow. We will start serving it on Tuesday after few days of dry ageing.

Tomorrow we will be exceptionally closed for a special event out of our shop. I will show you in the stories 😉

A lot of new faces around and I often forget the obvious: not everyone knows HOW IT WORKS!

So first welcome to the new people 😉

We are mainly doing sushi boxes for takeaway. All our boxes are available for pre-order via our website (link in bio) with minimum 1 day notice.

Once you get online, it’s super easy: select your boxes, at checkout select a day & time for pick-up, then process online payment et voilà!

You can pick-up Tuesday to Saturday, from 11.30am to 7pm.

To FIND US? That’s the tricky part for 1st time visitors 😂
Follow Google map’s instructions, we are located inside the cafe St Edmonds in Prahran. So if you if see two French guys making sushi, don’t be shy and come in… that should be us.

Our daily production is limited simply to maintain a high quality and because everything is freshly made just before pick-up. Many days get SOLD OUT quickly so better to order few days ahead.
