Shredded Lamb Ragu part 2
With the 2nd half of the Lamb Ragu I made the Easy Lamb Hotpot https://cookidoo.com.au/recipes/recipe/en-AU/r824911
After adding some extra veggies (peas and carrots) and some corn flour for thickening, I covered it with sliced potatoes.
As I used raw potatoes, I choose the Firra cast-iron casserole dish to cook my Hotpot in.
For the first 45min I cooked it with the lid on. Then I sprinkled grated cheese over it and finish baking it with out the lid, until golden.
The whole family absolutely loved it! Was an absolute winner!

In my case, I served half of the ragu with silky Polenta and the 2nd half I made into the Easy Lamb hotpot. We will have the hotpot for dinner tonight (photos to follow tomorrow)
Batch cooking is a great way to get organised for the week and to save time and money!
Tip:
The recipe asks for Pancetta. If you can't get Pancetta, smoked bacon would be the closest substitute or maybe Speck.
Prosciutto is very different in flavour and texture and therefore not ideal to use.
‼️ Pancetta is salt-cured, smoked pork belly
‼️ Prosciutto is uncooked and unsmoked ham

For the Quiche I used up some Ricotta (replacing the creme fraiche) I had leftover and ham instead of bacon.
The chocolate puddings are perfect for the lunchbox. 1 batch makes approx 10 to 12 little serves.

Tandoori Chicken Tacos
Super yummy and delicious!
You can prep the Tandoori chicken up to 24h in advance. Giving the chicken extra time to marinate and making this a super quick and easy dinner after a busy day.
The kids love putting their own Tacos together.
I added lettuce 🥬, Avocado 🥑, red onion 🧅, aioli and fresh coriander to mine, plus the tandoori chicken of course 🙂

Parmesan Chicken Tenders with Chopped tomato salad from the new book

We loved the parmesan crumb with the hint of lemon zest. And the special sauce is just divine!

We all loved this hearty, flavoursome dish! Perfect comfort food for a cool night.
The bread is super easy to make. It just has 2 long resting periods and therefore takes a bit of time.
According to my youngest son, it was the best bread I have ever made!

I marinated the chicken this morning after cutting the thigh fillets into strip's.
The lemon juice and the Yoghurt tenderised the chicken beautiful and the tandoori paste gives the chicken a delicious smoky flavour.
The Sliding BBQ Skewers from the MixShop are perfect for this dish. They make turning the kebabs on the BBQ super easy. And taking the meat off is as easy as squeeze and push!
Was an absolute hit with all the kids!
I used homemade Tandoori paste and homemade Greek style Yoghurt, taking cooking from scratch to an other level 😊

Last night I had 1.2kg of chicken thighs, but my kids could not decide between Sticky Sesame Chicken or Butter Chicken. So I decided to find a new recipe, one we have not tried before.
