Chicken Hawaiian Salad: amazing lunch idea for a hot, summer day!
1. Grilled chicken
2. Grilled pineapple
3. Spinach
4. Corn
5. Red kidney beans
6. Avocado
7. Tomatoes
8. Cucumber
Lime, olive oil and coriander - all a must to keep this freshness 😄
Make sure you choose organic spinach and tomatoes as they are a part of the list for products containing most pesticides ☠️

Raise a hand if you’ve never been on any sort of a diet. There are hundreds of food regimens, some being successful, some not. But what about the pace? If we lose weight quickly, for example being on a low-carb diet, would it mean that we won’t be able to keep it off?

The Ocean Salad: we underestimate the great things that the sea and ocean give us so I decided to make something to use that treasure.

Quinoa boiled in kombu with:

- smoked salmon
- edamame
- kombu from quinoa boiling
- cucumber

All seasoned with sesame, lime and plum vinegar.

Amazing source of finer, iodine and magnesium.

Being a Pole, cottage cheese is a huge part of one’s diet! We eat a lot, and I mean a lot of it and very often.
But what if you love it but want to be vegan or simply can’t digest dairy very well?
Fear not, I’m hear to save the day.
This vegan cottage cheese tastes just like the traditional one!
All you need:

A) 1/2 cup of cashews
B) 4 tablespoons of lemon juice
C) 4 tablespoons of almond milk
D) 2 tablespoons of nutritional yeast flakes
⠀⠀
All you need to do is soak cashews in cold water overnight and the blend everything together.
I eat it just like at home: with chives.

A healthy snack in between meals: roasted fennel & pak choi with dry tomatoes and olives. All seasoned with Himalayan salt, olive oil and grapefruit juice.

I got very ripe avocados 🥑 at the vegetable market I shop every week. They would have thrown it away but I decided to take them and make a simple yet delicious dessert!

Avocado-Chocolate Mousse!
⠀⠀
- 2 ripe avocados
- 1 ripe banana
- 3 tbsp of cashew butter
- 3 tbsp of cocoa powder
- 1 tsp of stevia
- 1/4 cup of almond milk

All blended together until smooth.
I decorated mine with roasted almonds, coconut and hibiscus (for a nice sour kick)

Whole grains are a huge part of my daily diet.
Today: Queenoa - the Queen of Whole Grains.
I boil it with kombu: edible ocean kelp contains high amounts of iodine and dietary fibre.
This time I prepared it with green peas and lentils.

Tofu balls with cashews on top, all seasoned with lime, avocado oil and teriyaki sauce.

Decoration: dry rose buds and arugula chips.

That creamy soup was a result of totally unexpected mix: peas boiled in almond milk, mint and WASABI - it twisted the taste to a completely new level!
I tuned it up with grilled Brussels sprout and sunflower seeds.
A taste to try out ASAP! 😋 🥣

The season for beetroots and beet leaves is here!
This magical veggie is a nutrients bomb (vitamins C, folate, manganese and more), has anti-inflammatory properties and keeps your blood pressure in check! And, of course it’s delicious!

I prepared baked beets, grilled zucchini with a simple stir-fry: brown rice, beet leaves (called also Swiss chard) and some tahini. All seasoned with lemon and lemon zest!

Saturday evening - I felt a bit carb-y so I treated myself to a homemade “fast-food”

1. Whole grain sandwich with:

• tomato
• cucumber
• pickled onions
Sauce: tahini mayonnaise

2. Sweet potato fries with thyme and Himalayan salt

When I go shopping, I love just buying different veggies and then letting my imagination work the magic!
I had few eggplants so this time I baked them & stuffed them with bulgur, hazelnuts, olives, raisins and garlic. Few leaves of mint to freshen the dish up + few drops of 🍋

I just had a cauliflower in my fridge and just followed my gut (pun intended)
Roasted cauli with ginger, garlic and curry + raising and peanuts. On top we have a coconut-crumbled tofu.
It was a blast
I’ve heard so many people saying granola is healthy cause it says “fit” on the box. What do you think about it? Have you ever read ingredients label on the box?
