This is easily one of my favorite go to dessert rieslings, year after year they deliver a superior wine and 2022 is one of their best batches. Sweet enough to compliment all 3 of your dessert offerings. upfront notes of citrus, pear, honey and delicate spice. A flavourful palate, it is medium-bodied and dry with a crisp, balanced finish. Splurge- Château Suduiraut Sauternes 2013 $51.25
Full-bodied and very sweet, yet the bright acidity balances the wine out. Creamy mouthfeel with phenolic undertones. Great finish. Beer- Skinny Dippin Stout from Sawdust City, Gravenhurst $3.75
A full-flavored, velvety smooth, oatmeal stout. Pours a dense black color with a thick head. Enticing aromas of dark roast coffee/caramel, chocolate, burnt toast and cooked fruit. Sweet, rich, creamy and full bodied, with flavors of dark malt, chocolate/mocha, spice, dark fruit, molasses and ash on a bittersweet finish.

Pinot Noir is perfect because it has the fruit, the earthiness, and the acidity that you are looking for in a gamey dish like lamb. This is a really lovely Pinot at this price point with a nose of earthy/savoury cherries, black raspberries, woodsy spice notes, underbrush and plums. It has a smooth entry on the palate with rich, ripe red berries, underlying savoury/underbrush notes, well integrated spices, and a firm spine of acidity driving the vibrant back end. Splurge- Goldeneye Pinot Noir, by Decoy, Napa Valley,2020 $79.95
Lush, layered and complex, this enticing Pinot Noir draws you in with aromas of ripe raspberry and black cherry, as well as notions of pennyroyal, clove and sweet baking spices. On the palate, supple tannins and elegantly balanced acidity frame juicy flavors of blackberry and Bing cherry, with savory hints of nutmeg, leather and breakfast tea emerging on the long, robust finish.
Beer- Fiddle and Field Pale Ale, Quayles Brewery $3.75
Pale Ales are known to complement lambs earthiness. They pair well with a lamb shank for both weight and flavour profile. .This beer is noted to have huge hop aromas and be bursting with citrus and tropical aromas. Fiddle & Field is a farm to glass experience, locally brewed.
In between consulting and getting ready for Valentine’s Day; we find time for beautiful people and sharing experiences surrounded by food, drink and making conversation! Found ourselves in blue mountain last night and this crowd of business owners were so much fun!

Intense ripe green granny smith apple aromas on the nose. More apple and fresh pineapple flavours on the palate with a lovely lingering lemony finish. Light to medium-bodied and good acidity.
Cloudy Bay Sauvignon Blanc 2022, New Zealand $43.95
A fresh, creamy-textured white with lots of freshness and lovely pear and green-apple character. Some white pineapple. It’s medium-bodied with crisp acidity and a flavorful finish. Less herbs and more clean, ripe fruit. Finally a beer option. Muskoka craft Lager $3.60
Lagers are extremely refreshing and have a lighter, cleaner flavour because they are fermented more slowly. Medium amber colour; aromas of malty cereal, fresh grass, zesty citrus and a hint of honey; on the palate it is dry and medium bodied with moderate carbonation and flavours of cereal, wildflower honey and a light hop bitterness.
