What to do with all that Basil?? One of the groups I am in shared this amazing idea!!
Basil salt:
1 1/2 cups fresh basil leaves and give them a rough chop. Place the leaves in a blender (or food processor) and add 2 cups of Kosher salt. Pulse a few times to breaks fown the basil into smaller pieces. Then take the contents of the blender and place on a baking sheet lined with either parchment paper or a silpat (so mixture doesn't stick to sheet). Spread out across sheet and place in an oven preheated to 170F. Bake for 30 minutes to dry out the basil. Break apart any clumps. Let cool. Move to a jar and enjoy!
Now you have a great finishing salt. Sprinkle across roasted vegetables or on top of deviled eggs or over fresh tomato slices.
