We're thrilled to share this honey processed yellow caturra from our own farm Balam. Nestled amidst lush forests, this lot of caturra thrives under the shade of native pine trees in the mountains of Chalatenango. At Balam, we're all about producing coffee in harmony with nature through agroforestry practices. 🌿
This lot of coffee was dried following the honey process (no bee honey involved). After being carefully hand-picked the coffee cherries were depulped, leaving the sweet mucilage that cover the green beans intact, and then they're sun-dried on raised beds for three weeks allowing the flavors to develop.
What does this mean for your cup? You can expect a silky sweet and well-balanced cup. Bright notes of sweet orange and tropical jam mingle harmoniously with a honey-like sweetness, creating a delightful coffee experience. 🍊🍯

Bourbon washed from Santa Rita is back on the shelves!
This is our fourth year roasting coffee from Santa Rita farm, by Carmen Silva. Santa Rita has been part of Carmen’s family for three generations. The farm is located on the slopes of the still active San Miguel volcano, and coffee is shade-grown under the canopy of native trees. All beans are handpicked, hand sorted and sun-dried at the farm.
Carmen has a strong dedication to sustainable farming practices and is permanently involved with the local community. Carmen has specifically sought to train local women to be in charge of the key operations at the farm, which is uncommon in the industry.
This lot of bourbon washed from Santa Rita is a sure crowd-pleaser! Expect a cup of coffee with chocolate-like sweetness and hints of cinnamon, with low acidity and smooth finish. We find it well rounded and classic coffee that brews a smooth cup with sensible but pleasant acidity, and medium body.

Coffee is one of the most traded commodities in the world, and it's not surprising that the global coffee market is heavily concentrated, as most wealth is. Concentration of any kind, makes certain players enjoy big logistical, infrastructural, and even political advantages that in one way or another are detrimental to the community where the situation takes place.
Most coffee in the world is sold by just a few big companies. Did you know that the Canadian coffee market is strongly dominated by two multinational coffee brands having over 75% of the marketshare. 🤯

When we choose to support local, small businesses (of any industry) it makes our communities stronger, more diverse & fun. It also strengthens the local economy. For every dollar spent at a small business, 66 cents on average stays local. While only 11 cents of every dollar spent at a large multinational company stays in the community. 🤓

Coffee roast level is often described as dark, medium, or light. The different roast levels are the result of the time the beans were roasted, and the temperatures used during the roasting process.
Lighter roasts are roasted for less time and at lower temperatures, while darker roasts take a bit longer and reach higher temperatures during the roasting process.
Dark roasts tend to be bolder and have simpler, deeper flavour. They are great for espresso based drinks or to be enjoyed with dairy (or dairy alternatives).
Light roast coffees on the other hand tend to be more complex and showcase a variety of different flavour notes. The body is lighter, oftentimes almost tea like. Pour over methods are recommended for lighter roasts in order to bring out the full array of flavours, and lighter coffees are best enjoyed black.
And then of course, there is always the middle ground and the all inclusive medium roasts with their mellow profile.

It is a Small Business Week here in Canada and since it has been a while that we have introduced ourselves, we thought of sharing about our family-owned business!
Hi 👋 we're Gustavo and Leena, we are the husband-and-wife team behind Firebat Coffee in Canada. Originally from El Salvador and Finland, respectively, we made a big leap of faith (or craziness as some might think) by leaving our comfortable life in El Salvador, and migrating to Canada in 2016 to begin our journey to establish Firebat Coffee.
Since 2017, we have been sourcing and roasting direct trade, specialty coffee from small scale shade-grown coffee farms and our own Firebat farm, Balam, in El Salvador. Over the years coffee has connected us with Canadian coffee lovers who value not only great flavor and exciting roasts, but also the story behind the beans in terms of ethics and sustainability.
The reason why we do what we do, is that we always wanted to use our skills and efforts to add to a positive change. Coffee industry still has a lot of injustice, and so we made a commitment to source exclusively ethical and sustainable Salvadoran coffee. And obviously, we love coffee - we could not live without it. Coffee keeps us going day after day, and continuously learning and exploring new flavors! 🧡☕
When not working on Firebat, our three children make sure to keep us busy for rest of the waking hours. When a rare moment of free time presents itself, you’ll surely find Gustavo rocking out his bass guitar or making sourdough bread, while Leena is either gardening or reading. 🎸

Our current offering from La Divina is a lot of bourbon was anaerobically fermented for 72hrs. After the fermentation period, the cherries were naturally processed and sun-dried on raised beds.
The final cup results in a complex coffee with low acidity and multiple fruity and sweet flavour layers. We 🧡 it in both pour over and espresso!
At Firebat, we believe that a cup of coffee isn’t just a cup of coffee on its own. The whole story of the coffee is important, from the biodiversity of the land, to the wellbeing of the producers, to the incredible flavour notes we get to taste after roasting.

Excited to add a new coffee to our offering coming from our own Firebat farm, Balam! 🐆
Let us tell you a bit more about our farm and where this coffee comes from. We acquired a 4 ha piece of land in the mountains of Chalatenango, El Salvador, in 2015. The farm was half planted when we started our replanting efforts. Sustainability and agroforestry are at the heart of this small farm, and we have planted over 12,000 coffee trees so far. Balam is now fully matured and producing a number of different varietals, including this amazing SL28.
Decadent and sweet, this naturally processed SL28 is truly dessert in a cup. Notes of sweet cherry and rich chocolate are reminiscent of black forest cake. The lingering sweetness will keep this coffee on your mind all day.

This Natural processed Pacamara from multiple Cup of Excellence winning producer, Ignacio Gutierrez, is a delicacy. Ignacio has been growing coffee since 2005 in the mountains of Chalatenango. Ignacio operates three small farms that are cultivated with Pacas, Pacamara, Gesha and SL28.
With this naturally processed pacamara you can expect a very sweet and fruit forward cup. Notes of blueberry and jasmine are reinforced by a honey-like sweetness and a juicy body. 🫐
