Position Title: Sous Chef

Position reports to: Executive Chef
Positions Supervised: Chef de Parties; First, Second, & Prep Cooks; Dishwashers

Position Summary

The Sous Chef is responsible for the smooth day-to-day operation for all the food outlets of CRC. Maintains high guest satisfaction by following Health/Safety and Company Standards.

Essential Functions:

• Reports directly to the Executive Chef
• Is fully responsible for the day to day operation of the kitchen
• Liase with all food and beverage production areas so the orders are done correctly and in a timely manner
• Ensures that proper par stocks of all food items are maintained
• Responsible for preparing kitchen duty schedules on a weekly basis and submitting to Executive Chef
• Ensure that all cook and hold temperatures are maintained as per company guidelines
• Ensure that all kitchen equipment is cleaned and sanitized after every use
• Does month end inventory of all kitchen items
• Responsible for reporting all malfunctioning kitchen equipment and report the same to the Executive Chef
• Along with the Executive Chef is responsible for all new menu presentations
• Any other duties as required by Executive Chef

Qualifications:

Education/Certification: Minimum Grade 12 Diploma, Culinary education or a combination of education and experience, Food Safe, WHMIS, MSDS

Experience required: minimum 3 - 5 years of continuing progression in fast paced Kitchen environment, a hotel environment is preferred. Minimum 2 years management or supervisory experience in a food service environment
