Just sharing with you my favorite smoothie, cake & salad with wild blueberry

1. Smothie
Ingredients
2 1/2 cups frozen blueberries
1 1/4 cup of apple juice
1 cup vanilla ice cream
1/4 cup milk
3/4 tsp cinnamon
Instructions
Blend all ingredients in a blender until smooth. Serve immediately.

Blueberry Banana Kiwi Smoothie
Ingredients
1 banana chopped
1 kiwi sliced
¾ cup wild blueberries
8 oz of vanilla yogurt
1 cup ice cubes
Combine the banana, kiwi, blueberries, ice cubes and yogurt into a blender. Blend until the mixture is smooth.

Wild Blueberry Citrus Smoothie
Ingredients
1 can of frozen orange juice concentrate 6 ounce
6 fluid ounces of water
One cup of wild blueberries
4 ice cubes
In a blender combine the orange juice concentrate, water, blueberries and ice. Blend until slushy. Pour into glasses and serve.
2. Salad
Ingredients
10 ounce mixed salad greens
1 pint fresh wild blueberries
1/4 cup walnuts
1/2 cup raspberry vinaigrette salad dressing
1/4 cup cheese
Put all in a large bowl, toss the salad greens with the blueberries, walnuts, and raspberry vinaigrette. Top with feta cheese to serve.

3. Cake
Wild Blueberry Pie
Ingredients
1 1/4 cups white sugar
3 tablespoons quick-cooking tapioca
1/2 teaspoon ground cinnamon
3 cups wild blueberries
1 tablespoon lemon juice
1 tablespoon butter
1 pastry for a 9 inch double crust pie
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Roll out half the pastry and line a 9-inch pie pan; trim crust to the rim of the pan. Loosely cover with plastic wrap and refrigerate.
Combine sugar, tapioca, and cinnamon. Toss sugar mixture with blueberries in a mixing bowl and sprinkle with lemon juice. Let stand fifteen minutes.
Meanwhile, roll out the top crust into a 10-inch circle. Cut into half-inch strips. Pour blueberry mixture into chilled pie shell and dot with butter. Add the pastry strips one at a time, weaving a lattice. Flute edges.
Place pie on a baking sheet to catch drips.
Bake in the preheated oven for 40 to 50 minutes, until filling is bubbly and crust is light brown. Cool completely before serving.

Wild Blueberry Dessert Squares
Ingredients
1 cup all-purpose flour
1 cup quick- cooking oats
1 cup packed brown sugar
1/2 tsp salt
1/2 cup shortening
2 1/2 cups fresh or frozen blueberries
1/4 cup sugar
Instructions
In a large bowl, combine the flour, oats, brown sugar and salt. Cut in shortening until crumbly. Press half the mixture into a greased 9-in. square baking dish. Bake at 350 degrees F for 10 minutes or until brown around the edges.
Combine blueberries and sugar; sprinkle over crust. Top with remaining oat mixture; press down gently. Bake 35-40 minutes longer or until golden brown. Serve warm.

Mini Wild Blueberry Muffins
Ingredients
1 cup butter softened
2 cups sugar
5 eggs
1 cup buttermilk
2 teaspoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 teaspoon salt
3 cups fresh or frozen wild blueberries
Additional sugar
Instructions
In a mixing bowl, cream butter and sugar. Add eggs, buttermilk and vanilla; mix well. Combine flour, baking soda, baking powder and salt; stir into the creamed mixture just until moistened. Fold in blueberries (batter will be thick).
Fill greased or paper-lined miniature muffin cups with about a tablespoon of batter. Sprinkle with sugar if desired. Bake at 400 degrees F for 10-15 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack

True Story...

Two monks went into a bank. One was trying to close an account.

The teller did not have the authority to close that specific type of account, so they had to call a specialist to make another appointment.

A few days later, a friend alerted us about a comment on Facebook about the encounter with these two monks...

I was in the bank the other day and two monks were being served beside me. The teller had to ask them to call the bank the next day and make an appointment to see a banking specialist as she was not authorized to handle so much money. So much for a vow of poverty! I am so disheartened by what's going on with this group and all the other shady dealings over land our current government is involved in. I want my Island to represent me, and the values of honesty and integrity. I want to....I'm so worried we are losing our autonomy as Islanders and it feels like a helpless situation. We need to stand up and express our concerns and say no! I think the only person with enough gumption would be ............... as Premier. I know where my vote is going come Election Day.......
