Chef Paul you wow’d with your creative genius snow cones, homemade honey vodka drizzle (literally honey from the rooftop of the Fairmont Royal York!) , fermented pickles, chilled Prince Edward Island Mussels and herbs. We had the privilege of taking some of the best shuckers from the United States to Pinette River Oyster Company during their visit to Prince Edward Island. These talented shuckers were gearing up for the Raspberry Point Oyster Shucking Competition, but first, they got a taste of PEI’s famous oysters straight from the source! We had a day of learning about the hard work that goes into the products that they had become so well-known for. It was a fantastic day of stories, and getting to know each other like old friends as they prepared mentally to compete that evening.
