If you are in a rush and your knife doesn’t have a half quarter sized chip out of it, we can usually sort it out same day. Here we have a Sakai Takayuki ZA-18 gyuto that’s in good shape, the edge is just a little fatigued. LETS GO!!

Kumokage Gyuto vs. Grape 🍇 . Our shipping manager @thatjerkchase has been practicing his sharpening skills in anticipation of a busy summer. Last week he completed a thinning and sharpening on this Hatsukokoro Kumokage Gyuto. . I’d say he did pretty damn good, what do you guys think?

Geometry matters pt.2. A knife that has been sharpened too many times without thinning will crack a carrot apart. A knife with a proper distal taper will slice through cleanly. How are your knives performing right now, do they need a thinning?

Nakagawa x Hatsukokoro blue#1 Gyuto
Let’s take a look at this beauty collaboration knife from Hatsukokoro and Satoshi Nakagawa. 🔪 Nakagawa-san is a traditional craftsman working out of Sakai. He started his own workshop after his Master retired in 2021. After visiting him last year we gained even more respect for this hard working and skilled blacksmith. He can forge-weld various steel types and is famous for his exquisite honyaki knives. 🔪 This latest collaboration does not disappoint! It features an excellent profile and sharpening done by Morohiro Hamono and as you can see from the video it is a dream to use. 🔪 What do you think about Nakagawa-san’s knives? Here is some footage from our recent visit with Satoshi Nakagawa. Nakagawa san is a relatively young blacksmith working out of Sakai. He has grown in popularity among cooks and collectors alike, and for good reason, he is an incredibly talented and versatile smith showing consistent results. At the age of eighteen, Nakagawa began apprenticing under Kenichi Shiraki. During his sixteen-year apprenticeship he built a solid foundation of skills that have brought him to the forefront of the trade. When his master retired, he took over and rebranded as Nakagawa Uchihamono in 2021 and began crafting knives under his own name. #nakagawahamono #thecooksedge #madeinjapan
