I know it's been a while since I've posted on here. I've been spending the last few months travelling, writing, and focusing on my academic work, but now I'm so happy to be baking again! I spent a month and a half in Germany studying Urdu, brushing up on my German, visiting family, and of course eating cake 🎂
Here I tried out a nrw almond orange blossom cake inspired by a Moroccan recipe. Made without gluten, simple and delicious!
I will be taking limited orders in Toronto starting October 20th up until mid-December, so if you want to order a cake just fill out the contact form on my website! I will also have availability in Calgary for the Christmas season. On top of that, I'm doing my scone-making workshops, also available for sign-up on my website.

Isn't Sunday the perfect day for afternoon tea? Today I'll be doing the first cream tea workshop where you learn to make the jewel of afternoon tea, classic British scones. And of course, you can't forget the tea! So we're also doing a tasting of high quality Indian, Chinese, and British teas. I'm so excited to finally be sharing this workshop!

Many people ask me why I chose the name High Rise Bakery - and since I'm a classic nerd of course it was a 3-way pun:
▪︎ The bakery started on the top floor of a "high-rise" apartment building
▪︎ Cakes "rise" in the oven
▪︎ The "high-rising" hot air balloon from "Around the World in 80 days" shows the international variety of desserts on offer
Now that I've moved to Toronto the hot air balloon has taken on a whole new meaning - after working in Edmonton, Calgary, and now Toronto, it's starting to feel like a travelling bakery 🌍

Introducing the Sophie cake!
This was one of the first cakes that I added to my menu: a coffee chiffon with a layer of chestnut cream, frosted with creamy French buttercream, topped with naturally dyed white chocolate ganache, and decorated with marzipan.
This cake is named after Sophie Blanchard, the first professional female hot air balloonist whose creativity and gall is a great inspiration for me. As I'm setting up my business here in Toronto I only hope that I can channel some of her adventurous spirit!

Hello Toronto!
It's been a long road with moving cities and getting a house set up. After doing my undergrad here, I've always wanted to move back and now I've finally gotten the chance!
With things more settled, I'm getting ready to bake again and I will have some availability to bake in July before High Rise Bakery fully reopens in October. Take a look at my website highrisebakery.ca to see my cakes and other creations!

Time for new beginnings in Toronto!
Spring has finally come to Alberta, the grass starting to turn green and the trees finally getting their buds. Spring always brings with it new beginnings, and for me that will be a fresh start in Toronto. I'm sad to leave my friends and family here, but I hope to keep making delicious cakes and lovely new connections in Ontario!
This was a special request for the Nannerl cake (inspired by the famous chocolate Sacher torte) with an alternate design. I don't do a lot of custom designs, but I love anything on the woodland theme! Marzipan eggs sit in a nest of chocolate ganache and swiss meringue buttercream on top of a fudgy almond flour chocolate cake.
What new beginnings are coming your way?
A cute little marzipan daffodil on a classic carrot cake!
I switched up the standard cream cheese frosting for a silky smooth swiss meringue cream cheese frosting, added dates and brown butter to the cake, and layered with walnuts and Seville orange jam.
Carrot cake is such a nostalgic spring flavour! Did you grow up eating carrot cake?
I was very lucky to be able to learn how to make pastel de natas from a master at !
This deceivingly simple little pastry definitely takes some expertise to make. Many bakeries specialize and only sell pastel de nata! While it's not going on my menu anytime soon, it was definitely a fun experience learning to make this delicious treat.

I didn't have the chance to make a cake for Easter this year since I was travelling, but here is last year's cake. Mini eggs are one of my favourite candies, so I paired them with chocolate buttermilk cake, German buttercream, coconut flakes, and a ganache nest.

It's hard to believe it's been a year since I made my first sale! I didn't start out wanting to sell cakes, but just to make something delicious for my friends and family. But I kept on experimenting and perfecting my recipes until eventually I decided to share my baking with a larger audience.
This was a cake I made for my family in 2020: funfetti cake with swiss meringue buttercream and marzipan decor.

Each of my signature cakes is inspired by traditional desserts from a different part of the world and named after an amazing woman from the country that inspired it.
And while some women make it into the history books, most do not. But, I hope to honour the traditions amazing women created by recreating them in cake.
I'm continuing to study world women's history and add to my line of signature cakes.

Happy (Belated) Hinamatsuri!
I took the weekend off to spend some time with my friends and made chirashizushi, a traditional dish for Hinamatsuri/Girl's Day! Sushi rice is mixed with seasoned vegetables like burdock and sh*take, then topped with an assortment of toppings! I used shrimp with homemade sakura denbu, egg crepe, pickled radish, and more.

Have you heard of Hinamatsuri?
In Japan, Hinamatsuri, Girl's Day, or Doll's Day is celebrated on March 3rd each year. It is a day for families to honour their young daughters spoil them with delicious foods like chirashizushi and sweet treats. Anything pink is especially preferred! Many people also put out an arrangement of dolls to symbolize the family.
While I'm not working this weekend, I hope to make an assortment of treats to enjoy with my friends and celebrate this great tradition!

Have you ever tried a chocolate tart?
This is one of my most requested desserts, and it is about as chocolatey as you can get! A cocoa sablé cookie shell is filled with rich belgian dark chocolate ganache, and for Valentine's, topped with a golden chocolate heart.
Order by February 8th at midnight for pick-up on February 13th. You can order it on its own or as part of Esther's Valentine's Tea Box!

Happy National Carrot Cake Day!
Had tons of fun with this, a carrot cake with browned butter and brown sugar for an extra rich flavour. It's covered in Cloud 9 frosting and marzipan details, winding vines surrounding a secret door in the tree stump. I wonder, what kind of creature could live there?

Though Esther Howland did not invent the Valentine's Day Card, she may be the reason you buy one this February. She popularized Valentine's Day cards in the US, using the assembly line method long before Henry Ford. She employed many women when there were few opportunities for work, and ironically she never married as she turned a celebration of love into a means for her to gain financial independence without a man.

I'm very excited to be chatting with Gopala Krishna, the founder of India Trails! After running very successful heritage walks in Hyderabad, he has expanded his work to focus on stories and histories from all over India.
My master's thesis focused on the late medieval art of Hyderabad and the surrounding region, and since then I've pivoted to baking cakes from home at High Rise Bakery. But, I haven't forgotten my interest in history; my signature line of cakes is inspired by historical women from around the world, and I hope to share their stories through food and conversation.
