Grilled Corn Salsa 🌽

Fresh Grilled Corn: Cut the grilled corn kernels off three cobs
1 Tomato: Seed and dice two small vine-ripened tomatoes
1 Onion: Red onion and scallions
1 Green chilli/Jalapeño: chopped finely
few sprigs of Cilantro: Chopped finely
Lime: Juice one lime
Salt and Pepper to taste

MIx everything and dig in with Crackers/Doritos, You can also eat on its own as a salad

Mumbai street style Pav Bhaji 🥘

FOR BHAJI:
▢ 1 cup cauliflower
▢ 1 small carrot
▢ 1 small beetroot
▢ ¼ cup peas / matar
▢ 1 tbsp butter
▢ 3 tomato, finely chopped
▢ ½ green bell pepper, finely chopped
▢ 2 potato, boiled & mashed
▢ 2 finely chopped onion
▢ 1 tsp salt
▢ 1 tsp + ¼ tsp kashmiri red chilli powder / lal mirch powder
▢ ¼ tsp turmeric
▢ 1 tsp pav bhaji masala
▢ water to adjust consistency

TO TOAST PAV:
▢ 8 pav / bread roll
▢ 4 tsp butter
▢ ½ tsp kashmiri red chilli powder / lal mirch powder
▢ ½ tsp pav bhaji masala
▢ 4 tsp coriander leaves, finely chopped

TO GARNISH
▢ 1 tbsp coriander leaves, finely chopped
▢ ½ lemon juice
▢ ½ tsp pav bhaji masala

Start with boiling potatoes, keep it aside. In an instant pot add salt, boil carrots, peas, cauliflower and beetroot, once cooked, mash them well.
In a pan add butter, a little bit of oil and saute onion, bell pepper and tomatoes till it releases oil. Add salt, all the spices and mashed potatoes and veggies. Mash them together till you get a homogenous consistency
To toast pav, add butter on a hot griddle, add chilli powder, pav bhaji masala and toast pav from both sides till they turn golden.
Serve it after garnishing with chopped onion, pav bhaji masala, cilantro leaves and lemon juice.

These soft, pillowy Instant Veg Rava Idlis are easy to make and a perfect way to start your mornings 🌝

Instant Veg Rava Idli

Ingredients:

1 cup Sooji (Semolina/ Bombay Rava)
1/2 cup Curd (Yogurt)
1 cup Water
1/2 inch Ginger , grated
1/2 cup Chopped onion
1/2 cup Chopped green bell peppers
4-5 french beans finely chopped
1/2 cup Carrot, grated
1 Tbsp Cilantro leaves (Dhania) Leaves , finely chopped
2 Green Chillies , finely chopped
1 tablespoon Mustard seeds
10 Curry leaves chopped
1 tablespoon Coconut Oil (substitute with any oil)
Salt to taste
1 teaspoon Eno Fruit Salt

Method:

In a large bowl add the rava , yoghurt and water. Whisk to combine all the ingredients.Let it sit for 15 mins, the rava will absorb the water.
To the same bowl, add salt, onions, carrot, bellpepper, and beans. Mix well to combine and set aside.
Preheat the idli steamer with enough water, Grease plates of the idli mould.
Heat a tadka pan with oil on medium heat , add the mustard seeds, curry leaves, grated ginger and green chilies. Saute for a minute and turn off the flame.
Add the tadka to the rava mixture, also add the Eno fruit salt and mix well.
Ladle the Veggie Rava Idli batter into each of the cavities and place it in the steamer. Steam for 12 minutes. Keep them covered for 3 more minutes before demoulding. Check if the idlis are done, by inserting a knife it should come out clean.

Serve Veg Rava Idlis with Coconut Chutney 💛🌱

Makhana Orange Kheer🧡🤍

Ingredients:

500ml Full fat milk
2 cups lotus seeds/phool makhana
1/2 cup sugar or as per taste
1 cup orange segments skin removed (with juice)
Cardamom powder - 2 tsp
Chopped Walnuts and Almonds - 1 Tbsp

Dry roast the lotus seeds/ phool makhana in a wok at a low flame for 5-7 minutes and crush them roughly.
Soak almonds and walnuts for 30 mins and keep aside.
Boil milk in a deep pan and allow it to turn creamy, keep stirring at equal intervals
Once the milk turns thick, add sugar, crushed makhana, cardamom powder and cook on a low flame for 5 minutes stirring occasionally
You can serve this warm makhana kheer after garnishing with chopped nuts

For Orange flavour - Switch off the flame and set the thickened kheer aside to cool.
After cooling add chilled orange segments and mix well. Garnish with dry nuts and orange segments. Chill for 2 hours and serve.

Egg Salad 🥪

Ingredients:

· 2 Eggs: boil it only for 3-4 mins, we want the yolks to be jammy
· Mayonnaise / Chipotle dip - 1 tsp
- Mustard sauce - 1 tsp
- Green onion: chopped 1 Tbsp
- Lettuce: chopped 1/2 cup
- Everything bagel seasoning (You can replace it with black pepper and salt)

Method:

1. Boil, peel, and chop the eggs.
2. Combine the chopped eggs and the remaining ingredients well.
3. Slather on bread, add seasoning and grill it.
4. You can also serve it on an open face sandwich or with crackers.

Fare - As we call it. Dal ki dulhan - known in UP, Dal Dhokli - known in Gujarat. A comforting one pot meal made with tuvar dal and wheat dough. We prepare it by simmering wheat flour dumplings in tuvar dal.

Fare / Dal ki Dulhan

Ingredients:

For Dal:
1 cup Tuvar Dal/
4-5 cups Water
Salt to taste
¼ tsp Turmeric Powder

For Fare / Dhokli Dough:
1 cups Whole Wheat Flour
Salt to taste
Water as Required

For Tadka:
2 tsp Ghee
Pinch of Asafoetida
4 garlic cloves chopped
2 green chillies chopped
1 big Tomato chopped
1 tsp Mustard Seeds
¼ tsp Turmeric Powder
¼ tsp Red Chilli powder

Garnish:
Cilantro leaves and Roasted & Crushed peanuts
Dry garlic chutney (optional)

Method:
- In a pressure cooker or Instant pot add tuvar dal, water, salt to taste, turmeric powder, and let it cook for 5mins.
- For Fare / Dhokli - In a mixing bowl, add Whole wheat flour, salt to taste and water and knead a soft dough. Keep it aside.
- Divide the dough and roll a big ball into a slightly thick Roti (5 cm thick). Cut out small rounds / diamonds using a small bowl or glass or a cookie cutter. Once the dal is cooked, Gently add the dumplings in. Pressure cook the dal for another 10 minutes, until the dumplings are cooked through.
- For tempering: In a pan, add Ghee, asafoetida, mustard seeds, garlic, green chillies, tomatoes, turmeric powder, red chilli powder and a pinch of salt.
- Add this tadka to the dal, finish with sprinkling peanuts and cilantro leaves. Serve hot after garnishing with garlic chutney and lemon slice.

Fare - A classic dish that hails from eastern Uttar Pradesh, popularly known as Dal ki dulhan or Dal dhokli
I remember enjoying this for a Sunday lunch with my family as a kid. It's a 'hug in a bowl'. My daughter loves it more than I do, and therefore I make it for us when we want to savour this wholesome goodness on a weekend.

Thandai Mix 🌈✨

Thandai Mix

Ingredients:
1 cup whole almonds
1 cup cashew nuts
30 whole black peppercorns
Seeds from 20 green cardamom pods
2 Tbsp white poppy seeds
2 Tbsp melon seeds
2 Tbsp fennel seeds
2 Tbsp dry rose petals
15-20 saffron strands

Instructions
- Add all the dry ingredients from the above list into a dry miller/blender and grind it to make a smooth powder
- Do not over grind else the nuts/seeds will start releasing their oil, if possible try and grind it in batches.
- Grind some, wait and cool the mixture. Grind again, wait and then Grind till you get the desired result.
- Store this mix to make Thandai flavoured desserts and drinks

Methi Parathas 🫓

Ingredients:
2 cups whole wheat flour
1/2 cup gram flour (besan)
1 cup methi leaves (fenugreek leaves)
7-8 finely chopped garlic
2 teaspoons oil or Ghee to grease the dough
⅓ cup water or add as required
salt or as required
1 tsp turmeric powder
1 tsp coriander powder
Ghee as required for cooking

Method:

Cleaning Methi leaves: Wash the leaves thoroughly with water. Soak the leaves in clean water for a couple of minutes. Swish and move the leaves gently with your fingers. This removes any soil or mud particles that are on the stems or leaves.
Drain the water again. You can repeat this process of soaking and draining once or twice or choose to thoroughly rinse the leaves under running water for a few times. Finally, drain the water well.

Preparing the dough: In a mixing bowl, add methi leaves, garlic, and then add the whole wheat flour and gram flour to it.
Now add salt, spices and a tsp of oil, mix the dough first. Later knead to a smooth and soft dough adding water as needed.
Note that the water proportion will vary with the water content in the fenugreek leaves and the type, variety of wheat flour.
Pinch medium sized balls from the dough. Flatten the dough ball and dust it lightly with some flour, With the help of a rolling pin, roll them into medium sized paratha. Make all parathas similarly
Roast them on a heavy bottomed hot skillet, Apply ghee on both sides and Flip a couple of times, until the parathas are evenly roasted.
Delicious methi parathas are ready
