Creamy Baked Veg / Vegetable au gratin #howtomake Ingredients Bechamel Sauce โข โ Cup Butter โข 4 Cloves Garlic โข 1 small Onion finely chopped โข โ Cup Flour โข 3 Cups whole Milk โข ยผ Teaspoon Rosemary โข 2 Teaspoons Salt โข 2 Teaspoons Pepper โข ยผ Cup Cream Vegetables โข 2 Potatoes diced into ยฝ inch pieces โข ยฝ Cup broccoli florets โขยฝ Cup mushroom chopped โข 1 large Carrot diced into ยผ inch pieces โข ยผ Cup sweet corn Cheese Topping โข ยผ Cup grated Parmesan Cheese โข ยฝ Cup grated Processed Cheese or Mozzarella โข ยผ tsp nutmeg powder Instructions Vegetables Add potatoes to 2 ยฝ cups of boiling water and boil for 3 minutes in a medium sized pot. To the same pot add carrots and cook for 3 more minutes. Next add corn and boil for another 3 minutes. Set aside. Bechamel Sauce Melt the butter in a heavy bottomed saucepan over medium heat. Add the garlic and onions and sautรฉ for 2 minutes. Add the flour and whisk into the butter. Cook for 2 minutes till the flour is cooked and smells slightly nutty. Reduce the flame and start adding milk in a steady stream while whisking continuously. Add milk in parts and keep whisking it into flour till it thickens, adding more milk as you go. This prevents the sauce from getting lumpy. Season with salt and pepper. Reduce the heat to low and simmer, whisking frequently, until the sauce thickens enough to coat the back of a spoon, about 3-4 minutes. Add cream and mix. Remove from the heat and set aside. Add mushrooms, broccoli and blanched vegetables to the sauce and mix well. Adjust seasoning if required. Pour this into a flat baking dish and use a spoon to lightly level it. Evenly sprinkle parmesan cheese, mozzarella cheese and nutmeg powder on top of the vegetables. Baking Bake in a preheated oven at 180C for 20 minutes or until the top is golden. Spread the poha on a large baking tray to bake for 8-10 minutes, toss it halfway through, so that it's evenly toasted Meanwhile, heat oil in a pan,add cashews, peanuts, and roasted chana dal. Fry, stirring continuously until the nuts turn golden. keep it aside Let's prepare the tempering by heating a Tbsp oil, add heeng, mustard seeds, turmeric powder, dry red chillies and curry leaves. Let everything sizzle on a medium heat. To assemble, Pour the tempering to the roasted poha along with fried nuts. add salt and powdered sugar, give it a good mix using two wooden spatulas.
