Creamy Baked Veg / Vegetable au gratin #howtomake Ingredients Bechamel Sauce โ–ข โ…“ Cup Butter โ–ข 4 Cloves Garlic โ–ข 1 small Onion finely chopped โ–ข โ…“ Cup Flour โ–ข 3 Cups whole Milk โ–ข ยผ Teaspoon Rosemary โ–ข 2 Teaspoons Salt โ–ข 2 Teaspoons Pepper โ–ข ยผ Cup Cream Vegetables โ–ข 2 Potatoes diced into ยฝ inch pieces โ–ข ยฝ Cup broccoli florets โ–ขยฝ Cup mushroom chopped โ–ข 1 large Carrot diced into ยผ inch pieces โ–ข ยผ Cup sweet corn Cheese Topping โ–ข ยผ Cup grated Parmesan Cheese โ–ข ยฝ Cup grated Processed Cheese or Mozzarella โ–ข ยผ tsp nutmeg powder Instructions Vegetables Add potatoes to 2 ยฝ cups of boiling water and boil for 3 minutes in a medium sized pot. To the same pot add carrots and cook for 3 more minutes. Next add corn and boil for another 3 minutes. Set aside. Bechamel Sauce Melt the butter in a heavy bottomed saucepan over medium heat. Add the garlic and onions and sautรฉ for 2 minutes. Add the flour and whisk into the butter. Cook for 2 minutes till the flour is cooked and smells slightly nutty. Reduce the flame and start adding milk in a steady stream while whisking continuously. Add milk in parts and keep whisking it into flour till it thickens, adding more milk as you go. This prevents the sauce from getting lumpy. Season with salt and pepper. Reduce the heat to low and simmer, whisking frequently, until the sauce thickens enough to coat the back of a spoon, about 3-4 minutes. Add cream and mix. Remove from the heat and set aside. Add mushrooms, broccoli and blanched vegetables to the sauce and mix well. Adjust seasoning if required. Pour this into a flat baking dish and use a spoon to lightly level it. Evenly sprinkle parmesan cheese, mozzarella cheese and nutmeg powder on top of the vegetables. Baking Bake in a preheated oven at 180C for 20 minutes or until the top is golden. Spread the poha on a large baking tray to bake for 8-10 minutes, toss it halfway through, so that it's evenly toasted Meanwhile, heat oil in a pan,add cashews, peanuts, and roasted chana dal. Fry, stirring continuously until the nuts turn golden. keep it aside Let's prepare the tempering by heating a Tbsp oil, add heeng, mustard seeds, turmeric powder, dry red chillies and curry leaves.
