Corcuera Viejo Manchego DOP is a pasteurized sheep’s milk cheese from the La Mancha region of Spain. This is a gorgeous cheese, aged for 1 year and is a Protected Designation of Origin Manchego. It’s age gives it lovely notes of buttered almonds and it’s lightly salted with a mild tang and subtle sweetness.
Pair with cured meats, Spanish olives, Marcona almonds and fig jam.
Serve with a chilled Cava (Spain’s version of Champagne) or a La Mancha Tempranillo.

Lankaaster Gouda is a pasteurized Dutch style, cow’s milk cheese from Glengarry Fine Cheese in Lancaster, Ontario.
The cheese is firm and slightly crumbly and the flavours complex. Mashed potatoes, butter, a touch of nuttiness and a mild tang develops on the tongue.
Serve in a ham sandwich, alone on crusty bread or with bread and butter pickles as the Dutch farmer would have it.
Pair with an Ontario Pinot Noir or a fruity beer.

Appenzeller Surchoix is a Swiss, Alpine style cheese from Appenzellerland in the Northeast of Switzerland. Made from raw cow’s milk and washed with a secret herbal brine, it’s aged for 4-6 months. Appenzeller has been in production for over 700 years and is lactose, colour and preservative free.
Nutty, fruity and slightly pungent, this cheese pairs well with sliced apples or pears. Add to a fondue or melt atop your French onion soup. Goes well with Riesling or Hard Cider.

Bonnechere is a semi-firm, raw, sheep’s milk cheese from Back Forty Artisan cheese in Mississippi Station, Ontario.
Modelled after a rare French cheese, The rind is toasted over an open flame before aging and the paste is tangy, fruity, slightly nutty and pleasantly salted.

Stonetown Wildwood is a local cheese from St. Mary’s, Ontario. It was Grand Champion at the SIAL International Cheese Competition in May of 2023.
Wildwood is a washed rind, Appenzeller style, raw cow milk cheese, rich and creamy on the palate, nicely salted and similar to a mild Swiss Gruyère.
This cheese melts beautifully so try it on your next grilled cheese!
Pair with Pinot Noire, Gewunstraminer or a young Tawny Port.

1969 Gran Réserva Manchego is a twelve month, raw sheep milk cheese from La Mancha Region of Spain and has Protected Designation (DOP).
